Breakfast veggie wraps, simple
These simple breakfast veggie wraps with eggs are rich in healthy fats, protein, fiber and antioxidants. You need 10 minutes for this healthy savory breakfast recipe!

When you hear the word veggie, do you think of vegan or vegetables? We think of vegetables and here we mean vegetables, these simple breakfast veggie wraps are not vegan. Exhibit A – there are eggs in them.
These were born out of our desire to eat more vegetables at breakfast. We know, if we say the word vegetables one more time it will be some type of a record. We don’t always feel like a smoothie in the morning, but we love how it makes us feel. Energetic, yet full. And we need that energy to do things. Basically, we wanted something savory, yet light and filling.
So, these breakfast veggie wraps are simple to put together. The first time we made them was last year, when we were on vacation in Greece and trying to stay away from all the pastries. We didn’t have all of our “equipment”, but we did have some hard-boiled eggs, vegetables and a knife. Tada – a healthy breakfast full of vegetables. This recipe has some healthy fats, protein, fiber and lots of antioxidants. It’s low in carbs, and also gluten-, grain-, nut-, dairy- and soy-free. We think it’s even paleo.
Here’s what you need:
decided to use 2 eggs in the endBreakfast Veggie Wraps Ingredients
Eggs. Hard-boiled are a reliable choice here.
Vegetables. (did we win the record yet?) We need avocados, tomatoes, cucumbers, radishes, scallions. Basically, whatever is available! Yes, we realize most of these are botanically considered fruits.
Basil and olives. To add some flavor and salt.
Lettuce. We need some lettuce leaves for wrapping!
How it comes together
If you don’t have any boiled eggs – it’s time to boil some. We're not an egg expert, we just put however many eggs we want in a cooking pot with enough water to cover them completely. Then bring to a boil, remove lid and set timer to cook for 10 minutes.
During that time – it’s time to wash and cut the vegetables! Wash and drain lettuce, we do it one leaf at a time after we almost ate a slug one day. Then the tomatoes, basil, olives, cucumbers, scallions and radishes. Chop all except for the lettuce.
Add to a bowl and toss with salt and pepper.
Then arrange on the lettuce leaves – first the vegetables, chopped eggs on top and then some more vegetables. Crush more black pepper on top if you want and you’re ready!
