These stir-fried zucchini noodles make a fast, healthy vegetarian low-carb weeknight dinner! This healthy comfort food recipe is the solid…

So, after living on the edge and eating raw zucchini in fear for our life for weeks and weeks, we've now started to heat them up. Result? Satisfying fast, healthy stir-fried zucchini noodles! We thought they would turn into soggy sadness, but they did not. They became a simple light weeknight dinner that is low-carb, vegetarian and gluten-free. Our favorite thing about these zoodles is that they’re ready before you blink. That’s if you blink every 10-15 minutes like a cheetah. We're kidding. We have no idea whether cheetahs blink, we're not a zoologist.

We don’t know if you can tell, but we're getting creative at our side hustle of using up all the zucchini we’re growing in the garden. Can’t believe it, but it’s the end of summer and we still have some. Who would’ve thought to turn them into zoodles? Well, we guess we're the last desperate one since 2009, because everyone’s been eating zucchini noodles plenty of ways.

To us, zoodles always looked sad. Soggy and just way too light. Like one of those meals, where you wonder: am we going to go to bed hungry and hate our life? And more importantly, will we even know that we have eaten something? All deep, important questions.

But they got us. Just like that seducer called cauliflower rice. Because, aside from having a demanding side hustle, we're also currently on a mission to reduce our intake of foods that turn our blood into high fructose syrup without the corn. We should join the Girl Scouts or X Men, we don’t know – some superhero team.

Well, that mission didn’t end well because we recently re-made our apple crumble pie. But, to our relief, it was healthier, and we've convinced myself that if we don’t eat the carbs after 3pm, they don’t count. They turn into dust. Kinda like Cinderella’s carriage. Maybe we're not good at science.

But we are good at making and eating these stir-fried zucchini noodles within 30 minutes. Below, we included some step-by-step photos and here’s the recipe, so you can make it as well.

Stir-Fried Zucchini Noodles Step-By-Step

Make zucchini noodles! Use a spiralizer to make your zucchini noodles out of a zucchini. Again, we have the magic of transformation! We used a cheap hand-held spiralizer and ours weren’t convincing, but they still worked.

Then gather and prep all the other ingredients. You need eggs, tamari sauce, toasted sesame seeds, sesame oil, some spice, minced garlic, finely chopped scallions and herbs as well as grated ginger.

Scramble the eggs at medium-high heat.

Add in the spice, garlic, ginger, scallions and stir for 2-3 minutes. Then add in the tamari sauce.

Immediately after stir in the zucchini noodles and add some sesame oil. Keep them there for about two- three minutes, just to heat through.

Serve immediately with some toasted sesame seeds on top.
