Salads
Mediterranean white bean salad
This Mediterranean white bean salad recipe is simple to make, full of flavor, has a low glycemic index and is the solid healthy lunch, dinner or side.

Tomatoes are slowly, but surely turning red and we're making more and more tomato-based salads and toppings for our oat-based toasts. Salads like this Mediterranean white bean salad that we just loved, loved, loved the other day.
We don’t know why, but we put capers on everything now. Salad – capers. Fish – capers. Meat – capers. Ice cream – capers. We used to hate those when we first tasted them, but things change.
We could’ve probably had the bean salad on its own, but we served it with some fried seabass and tzatziki and it was SO satisfying – the recipe will be here soon. Plus, it’s got a low glycemic index, is full of nutrients, ready in 5-10 minutes and is a healthy lunch or dinner. We hope you enjoy it!
