If you’re looking for a simple healthy lunch idea that you can make in like, what, 10 minutes, this tasty spinach bean corn and feta salad recipe is what you need! It’s satiating, yet light and it’s become one of our favorite healthy lunches lately. It’s high-fiber, antioxidant-rich, filled with skin-protective carotenoids, wonderful and simple.

Fun fact: we've never been a huge salad fan.

And now you’re like: “You obviously have no idea what fun is!”

If you had told us that we would be eating a salad for lunch a few years ago, we would probably spit in your face and scream “NEVER” while running away.

Please excuse our imaginary behavior.

Salad to us was always just a bunch of leaves thrown together in a bowl. That’s it.

You know what we like? An assortment of pizzas, chopped and thrown together in a bowl.

Salad = Not the same.

So, a few years ago we were totally out of ideas about what to eat for lunch at work. We know, we need some serious help. Forget about world hunger, what am we having for lunch?

We always had either our favorite pizza OR a sandwich, a falafel. Basically, anything made almost entirely out of a freshly baked satisfying white flour dough. Mmmmmmmm, gluten!

But then we started gaining weight, feeling annoyed at every word our colleagues said, our skin was pale with a few shades of gray, some breakouts and cracked mouth corners. Oh, yeah, we were a joy to be around.

It took a little while, but thanks to our friend Google, we understood that this is probably because we're not getting any vitamins. Or minerals.

For breakfast, we would have coffee or you know – nothing, and for dinner, maybe more pizza. Top that with 3 snickers as an afternoon snack. Our body was starving for nutrients.

We decided to change that. It was a little difficult because at work everyone would still be eating pasta and they weren’t into salads.

However, this did not stop us! Every morning, we would wake up and start making a salad for our lunch break that day.

Within a month, we started feeling better, our salads started tasting better as we added not just lettuce but all kinds of stuff.

And since making this small change – just eating a healthier lunch, we've changed our diet completely. Now we rarely get annoyed and our skin has gotten better. During winter, it’s still pale, but we never have breakouts and cracking mouth corners, yay!

That was a lot of personal information which we hope you would not use against us. Instead, use this recipe and make this spinach bean corn and feta salad for your lunch break.

  • Yield: 2
  • Prep: 10 minutes
  • Total: 10 minutes

Ingredients

  • 2 cups of baby spinach
  • 1 cup white beans (cooked or canned)
  • ½ cup corn
  • 2-3 spring onions (depending on how large they are)
  • 1 small red pepper
  • 2 radishes or broccoli florets
  • 2 small tomatoes (optional)
  • some feta cheese
  • 10 olives
  • 1 tbsp olive oil or flax oil
  • 1 tsp balsamic vinegar or lemon juice
  • handful of basil leaves (optional, but recommend!)

Method

  1. Clean spinach and drain and rinse beans and corn. Make sure there is no fluid or water left in either and place in a large salad bowl.
  2. Clean and chop peppers, radishes or broccoli florets, onions, tomatoes and olives. Add the ingredients in the salad bowl.
  3. Add 1 tbsp of vinegar or lemon juice and 1 tbsp of olive oil. Crumble feta cheese and add it to the bowl.
  4. Mix everything together. Add salt to taste – we didn’t add salt, since feta cheese, beans and olives were salty enough.
