We asked this healthy salad: “Which ingredients do you want?” and it said “Yes!”. It's an simple avocado corn feta chicken salad that is satisfying and one of a reliable high-fiber high-protein recipes for lunch or…

This healthy salad happens when you’ve got a lot of produce and good food at home and just can’t decide which way to go when it’s lunch and you’re hungry. There’s corn in there, there’s chicken in there, lettuce, avocado, then there’s the Greek/Mediterranean part with olives, basil, cucumbers, tomatoes and feta cheese. We asked this salad “Which ingredients do you want?” and it answered: “Yes.” It’s basically a healthy avocado corn feta chicken salad recipe with everything that is satisfying, rich in antioxidants and fiber and high-protein as well.
Ingredients For A Summer Salad With Everything
Avocado. There’s a big ripe avocado in this for the healthy fats and the taste.
Corn. The first time we made this, we didn’t just open a can of corn, rinsed and drain it. No, no. We watched a few videos on YouTube, saw people chopping corn on the cob and decided to try our luck there. We almost chopped our fingers off, cried a few tears, felt like a failure, and like we would never make our parents proud. But in the end, we did it. We chopped that corn as if we knew what we were doing. Some of it even made it into the salad. Update: Last time we shot the photos, we didn’t care, so we just used canned corn. It’s called getting wiser.
Chicken. Used some leftover chicken in here, was good. If you don’t like chicken, you can just leave it out, add shrimp or add any type of legume you like (chickpeas, lentils, beans…) or anything you like.
Vegetables. Ohhh, summer. So much goodness in here. We’ve got a good amount of tomatoes, lettuce, cucumbers, scallions, arugula and basil.
Feta & Olives. Can’t stop eating feta cheese and olives lately, so we didn’t add any salt and it turned out great.
Olive oil, garlic, and lemon. No surprise here, since everyone knows the only dressing we can make is olive oil. We did overcomplicate this one by adding a squeeze of lemon and of course, that sweet talker garlic.
How it comes together
Simple. You just add everything we just mentioned to a large bowl, mix it together and eat. You can share, but if you’re hungry you might as well just have everything yourself. People don’t like salads anyway, right?
- Boil some water and cook corn
- Chop vegetables & chicken
- Add it all to a salad bowl
- Make a dressing with olive oil, garlic & lemon juice
- Pour it over the rest of the ingredients
- Mix it all together
- Eat right then and there.
Make Ahead?
If you want to make this ahead, you probably can. The only thing stopping you from making this life-changing experience is the tomatoes. Those seductive, curvy ladies in red will make your salad soggy if you don’t eat the whole thing right away. Solution? Add the tomatoes later. You can do the same for the avocado and the dressing. Everything else will be fine in the fridge for a while.
