Oatmeal Peanut Butter Chocolate Pancakes

So we mentioned a few times already how we don’t like chocolate that much…we know, total weirdo alert here. And yet, for a few weeks we've been waking up craving chocolate. We don’t know what it is…maybe some weird deficiency? Who knows.

We usually try to not start our mornings with a cup of sugar, we drink a lot of water and by noon this craving always goes away.

However one day, we did our whole morning routine thing wrong, went on social media, read the news, didn’t work out and decided to also make pancakes and watch Youtube videos. Not a reliable way to start a morning let us tell you, it didn’t end up being a productive day. Still, we did finish something that day because we made these peanut butter pancakes. And even though they’re not a green smoothie, they’re a healthier version of pancakes. Plus see that melted chocolate?

How These Peanut Butter Pancakes Happened

Now, we'll be honest, on days like that one – if we had normal flour, butter and sugar at home we would’ve never thought about making these peanut butter chocolate pancakes healthier. Didn’t care. We wanted to eat something with melted chocolate in it, on it or near it and whether that thing was oats or regular flour didn’t concern us at all.

But, we had our oats, our peanut butter, and 85% dark chocolate, so we decided to make healthier pancakes with oatmeal. Put it all into one bowl, then blended with our hand blender and added chocolate chips.

fast and simple and satisfying! Exactly what we needed on that morning!

Update: We made these a year ago, and now that we're a better person, we haven’t bought peanut butter in a while and so the last time we made these it was using hazelnut butter. Very tasty, but any nut butter will work though – almond or peanut – use whichever one you prefer.

  • Yield: 2
  • Prep: 5 minutes
  • Cook: 5 minutes
  • Total: 10 minutes

Ingredients

  • 2 eggs
  • 1/2 cup oats
  • 1/2 tsp vinegar
  • 1/2 tsp baking soda
  • 1 Tbsp natural peanut butter
  • 2 Tbsp chocolate, chopped
  • 1 Tbsp honey
  • 1 tsp coconut oil
  • 2 Tbsp milk of choice or water

Method

  1. Put all ingredients for the pancakes, except the chocolate chunks in a bowl or your blender if you don't have an immersion blender. Use your immersion blender or your blender to blend the recipe. Then add in the chopped chocolate and walnuts.
  2. Cover the surface of a non-stick pan with coconut oil and preheat over medium-high heat. Pour in the mixture, making smaller pancakes (size of your palm). When bubbles appear and the edges look done, flip the pancake and cook until golden brown on the other side as well.
  3. Top with toppings of choice!

Notes

Update:

In the past we made this recipe using natural peanut butter, but recently we started using more almond and hazelnut butter when we cook, so we actually used hazelnut butter for the video and the images that you see. Nevertheless, the recipe will work with any nut butter you choose.

Original Recipe:

1 egg 1/2 tsp baking powder 1 1/2 Tbsp peanut butter 1 1/2 Tbsp honey 1/3 cup oats 1/4 cup chocolate, chopped 3 walnut halves, chopped 2 Tbsp coconut oil
