Wraps
Lettuce wraps with quinoa and bean dip, vegan
light, full of flavor quinoa and bean lettuce wraps - great healthy lunch idea! This recipe is vegan and gluten-free.

When life gives you lettuce, wrap something tasty in it. This everlasting wisdom has been haunting us during our waking and sleeping hours for almost a year. Still, it took over 8 months and these vegan lettuce wraps to discover how heavenly something wrapped in lettuce can taste.
Lettuce wrapped around smooth fresh avocado sauce with the texture of a cloud, creamy velvet-like yet spicy bean dip, fluffy quinoa and crunchy fresh fragrant salad – that’s all we've been wanting all our life. We just didn’t know it. Salad wrapped in a salad, roll your eyes all you want, it doesn’t get any better than that.
Nothing and we mean nothing compares to these quinoa-bean lettuce wraps and we mean it in a Sinead O’Connor way.
We are in tears writing this, wondering if we should shave our head or not and biting our nails and spitting them out on our wooden floor.
Why?
Well, we like nails on the floor. But also it’s 9 pm and in Germany, at this time even the internet is closed. We don’t have any beans or quinoa to make these wraps right now and the soonest we can buy groceries is tomorrow at 8 am.
Our leftovers are non-existent.
Our mind is in overdrive. We are going insane. We feel used, seduced and abandoned by these quinoa bean lettuce wraps.
Well, we guess we should’ve known better. No garlic-rich, onion-loaded, bean-wealthy, quinoa-successful and avocado-luxurious lettuce wrap can stay in your life forever.
But we will survive tonight (somehow!!!!) – tomorrow is a new day and we will make them again. All we'll need are cooked quinoa, a lettuce, a can of kidney beans, avocado, lemon, garlic, some veggies, onions, some chili powder to spice up our life and gut and some functioning taste buds.
We'll make them for lunch and for dinner.
Who am we kidding?
We'll probably also make them for breakfast – it’s Saturday, who cares if we ate 2 cloves of anti-viral detoxifying garlic?
We made these last Saturday and as you can tell – we are obsessed with them.
But beyond their addictive properties that turn a normal human being like us into a complete psychopath, they’re healthy, suitable for weight loss and great for skin, hair and nails.
So you might be a psychopath, but at least you’ll be a physically healthy attractive one.
And isn’t that the dream?

- Yield: 6-7 lettuce wraps
- Prep: 25 minutes
- Total: 50 minutes
Ingredients
Bean Dip:
- 1 can /1 cup red kidney beans
- 2 garlic cloves
- 1 small tomato
- 1 tsp olive oil
- 10 basil leaves
- Optional: 1 tsp chili powder
Avocado Dip
- 1 avocado
- ½ lemon – juiced
- 10 basil leaves
Salad
- 1 tomato
- 1 small red onion
- 1 small pointed green/yellow/red pepper
- 5 small green olives
- 1 tsp olive oil
- ½ cup arugula
- salt to taste
Additionaly:
- 1 cup cooked quinoa
- 1 lettuce head
Method
- Bean dip: Slice tomato into quarters, rinse and drain beans from the can, peel garlic cloves and smash them. Place all ingredients – beans, tomato, garlic, olive oil and basil leaves into a food processor and blend until thick and smooth.
- Avocado dip: Peel avocado and place into your food processor. Squeeze the lemon and add the juice and the basil leaves to the avocado – blend until stunningly creamy and smooth.
- Salad: Chop onion, tomato pepper, olives and arugula small and place into a small/medium bowl. Add olive oil and salt to taste.
- For the wraps: Wash lettuce leaves dry with a paper towel. Place quinoa in the center of the lettuce leaf, then add the bean dip, avocado sauce and finally salad. Don’t overstuff - after all you can afford to eat another lettuce 😉
- Enjoy!
