  • 2 large eggs
  • 1/2 cup unsweetened, plain almond milk
  • 2 tablespoons melted coconut oil

  • 2 tablespoons unsalted butter
  • 1 tablespoon dark rum
  • 1 large banana, sliced into 12 even pieces
  • ¼ teaspoon cinnamon

Instructions

  1. Preheat your oven to 350ºF (175ºC). Line a 12-cup muffin tin with paper liners, ensuring they are ready for the batter.
  2. In a medium bowl, combine all the dry ingredients: all-purpose flour, baking soda, ground cinnamon, and kosher salt. Whisk them together thoroughly to ensure even distribution and set this mixture aside.
  3. Next, prepare the star of the show: the Bananas Foster topping. In a large skillet, melt the 2 tablespoons of butter over medium-high heat. Once melted, carefully add the 1 tablespoon of dark rum to the pan, stirring to combine. Place the 12 banana slices in a single layer in the skillet. Dust them lightly with ¼ teaspoon of cinnamon and ⅛ teaspoon of salt. Cook the banana slices for 2-3 minutes on each side until they turn golden brown and beautifully caramelized. Gently flip them with a spatula or small tongs to avoid breaking them. Remove the caramelized bananas from the pan and set them aside on a plate for later.

Using the same skillet (don’t clean it, those bits are flavor!), heat the 2 tablespoons of butter and 2 tablespoons of dark rum for the wet ingredients over medium heat.   5. In a large mixing bowl, combine the light brown sugar and maple syrup, whisking until well incorporated. Add the mashed bananas to this mixture and mix again until smooth. Crack the two large eggs into the bowl and whisk vigorously until everything is thoroughly combined. Pour in the unsweetened plain almond milk and whisk all the wet ingredients together until you have a cohesive mixture.
  6. Gradually add the reserved dry ingredients to the wet ingredient mixture. Mix gently with a spatula or spoon until just combined. Be careful not to overmix, as this can lead to tough muffins. Finally, stir in the 2 tablespoons of melted coconut oil until fully incorporated.
