Ingredients

For the Quinoa

  • 1 cup white quinoa
  • 2 cups water

For the Tofu

  • 14 oz. firm tofu
  • 2 tablespoons olive oil, divided
  • 1/2 tablespoon chili powder
  • 2 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper

For the Peppers

  • 2 large peppers, sliced (any color)
  • 1 medium purple onion, sliced
  • 1.5 tablespoons olive oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ground cumin
  • 1/8 teaspoon smoked paprika
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper

For the Black Beans

  • 1 15-oz. can black beans
  • juice of 1 lime
  • 1 teaspoon cumin
  • 1/8 teaspoon salt
  • Toppings:
  • avocado
  • fresh cilantro
  • lime wedge

Instructions

For the Quinoa

  • In a large pot, combine quinoa and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until all the water has been absorbed and the quinoa is fluffy. Set aside.

For the Tofu and Peppers

  • Preheat your oven to 400ºF (200ºC). Lightly spray a large baking sheet with cooking spray or line with parchment paper for easy cleanup.
  • To prepare the tofu, carefully remove it from its packaging. Place the block of tofu between two pieces of paper towel or wrap it in a clean tea towel. Place the wrapped tofu on a plate and top it with something heavy, like a cast-iron pan or a few cookbooks, to press out as much excess moisture as possible. Let it sit for at least 10 minutes. This crucial step helps the tofu crisp up beautifully when cooked.
  • While the tofu is pressing, slice your bell peppers and purple onion into uniform strips. Transfer them to a medium-sized bowl. Drizzle with 1.5 tablespoons of olive oil, then sprinkle with 1/2 teaspoon garlic powder, 1/2 teaspoon ground cumin, 1/8 teaspoon smoked paprika, 1/8 teaspoon salt, and 1/8 teaspoon pepper. Toss well until the vegetables are evenly coated. Spread the seasoned peppers and onions on one half of your prepared baking sheet.
  • Once pressed, remove the tofu from the towel and chop it into bite-sized cubes. In another medium-sized bowl, combine the tofu cubes with the remaining 1/2 tablespoon of olive oil, 1/2 tablespoon chili powder, 2 teaspoons garlic powder, 1 teaspoon ground cumin, 1/8 teaspoon salt, and 1/8 teaspoon pepper. Toss gently to ensure all tofu pieces are coated with the delicious spice blend.
  • Heat a large skillet over medium-high heat. Add 1/2 tablespoon of olive oil. Once the olive oil is fragrant, add the seasoned tofu cubes and sauté for approximately 5 minutes, stirring occasionally, until they begin to brown slightly. This step adds an extra layer of texture and flavor. Then, transfer the sautéed tofu to the other half of the baking sheet, alongside the peppers and onions.
  • Bake the tofu and peppers in the preheated oven at 400ºF (200ºC) for about 15 minutes. Halfway through the baking time (around 7-8 minutes), gently toss the tofu and vegetables to ensure even cooking and browning. They should be tender-crisp and lightly charred in places.

For the Black Beans

  • While the tofu and peppers are baking, prepare the black beans. Heat a small pot over medium-high heat.
  • Drain and rinse the can of black beans. Add the beans to the pot along with the juice of 1 lime, 1 teaspoon cumin, and 1/8 teaspoon salt. Bring the mixture to a gentle boil, then immediately reduce the heat and let it simmer for a few minutes to allow the flavors to meld. Remove from heat.
  • To assemble your delicious burrito bowls, divide the cooked quinoa, roasted tofu, seasoned peppers and onions, and flavorful black beans equally among four individual bowls.
