- 3 cups sliced English cucumbers
- 1 cup cherry tomatoes, halved
- 1/2 small red onion, thinly sliced
- 1 tablespoon apple cider vinegar
- 1 teaspoon lemon juice
- 2 tablespoons Greek yogurt
- 1/8 teaspoon salt
- 1/8 teaspoon pepper
- 4 oz feta, cubed or crumbled
Couscous
- 1.25 cups water
- 1 cup couscous
Salmon
- 4 6-oz. salmon fillets
