Ingredients

  • 1.75 cups white whole wheat flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/8 teaspoon salt
  • 1 cup fresh blueberries, or frozen (no need to thaw)

Wet Ingredients

  • 2 large eggs
  • 1/2 cup honey
  • 1/3 cup nonfat Greek yogurt
  • 1 cup mashed banana, (approximately 2 medium bananas)
  • 1/2 cup unsweetened almond milk
  • 1 teaspoon vanilla extract
  • 2 tablespoons melted coconut oil

Instructions

  1. Prepare Oven and Muffin Pan: Preheat your oven to 350ºF (175ºC). Line a 12-cup standard muffin pan with paper liners or silicone cups. For added non-stick assurance, lightly spray the inside of each liner with cooking spray. This helps prevent sticking and makes removal easier.
  2. Combine Dry Ingredients: In a medium-sized mixing bowl, whisk together the white whole wheat flour, baking soda, ground cinnamon, and salt until they are thoroughly combined. Ensure there are no lumps. Set this bowl aside.
  3. Mix Wet Ingredients: In a separate, large mixing bowl, start by whisking the two large eggs until they are light and frothy. Then, add the honey, nonfat Greek yogurt, mashed banana, unsweetened almond milk, and vanilla extract. Mix well with a whisk or spatula until all the wet ingredients are smoothly combined and homogeneous. (Do not add the coconut oil yet).

  4. Combine Wet and Dry: Gradually add the dry ingredients mixture to the wet ingredients. Using a spatula, gently stir the batter until just combined. Be careful not to overmix; a few small lumps are perfectly fine and often lead to a more tender muffin. Overmixing can develop the gluten too much, resulting in tough muffins. Finally, add the melted coconut oil and gently fold it into the batter until evenly distributed.
  5. Fill Muffin Wells: Generously fill each prepared muffin cup with the batter. For those signature tall, domed tops, we recommend filling the cups between three-quarters full and all the way to the top. This recipe yields 12 standard-sized muffins.

  6. Bake the Muffins: Place the muffin pan into the preheated oven. Bake for 23-25 minutes, or until the tops are golden brown and a toothpick inserted into the center of a muffin comes out clean or with only a few moist crumbs attached. Baking times may vary slightly depending on your oven, so keep an eye on them.
  7. Cool Before Serving: Once baked, remove the blueberry muffins from the oven and allow them to cool in the muffin pan for at least 10 minutes before carefully transferring them to a wire rack to cool completely. This crucial cooling period helps them set properly and prevents them from becoming too moist or soggy on the bottom. Enjoy warm or at room temperature!
