Why the Instant Pot is a Game-Changer for Chili

The Instant Pot has revolutionized home cooking, and for chili, it’s particularly transformative. Traditional chili often requires hours of simmering to develop deep, complex flavors. The Instant Pot, however, uses pressure to significantly reduce cooking time while intensifying flavors. This means you can achieve that slow-cooked taste in a fraction of the time, making homemade chili a viable option even on your busiest nights. Beyond speed, the Instant Pot offers:

  • One-Pot Convenience: Brown your meat, sauté your aromatics, and pressure cook all in the same pot, minimizing cleanup.
  • Flavor Infusion: The high-pressure environment forces flavors deeper into the ingredients, creating a more cohesive and robust chili.
  • Consistency: Achieve perfectly cooked beans and tender meat every time, without the need for constant stirring or monitoring.
  • Energy Efficiency: Pressure cooking often uses less energy than conventional stovetop or oven methods.

It’s truly an all-in-one solution for chili perfection.

Essential Ingredients for the Ultimate Instant Pot Chili

To create this magnificent chili, gather your Instant Pot and these carefully selected ingredients, each playing a crucial role in the overall flavor profile. Our combination ensures a hearty, well-balanced, and incredibly satisfying bowl every time:

  • Ground Beef (85% fat recommended): We opt for ground beef with a slightly higher fat content (like 85% lean) because it renders beautifully, adding an incredible depth of flavor and richness to the chili base. This fat contributes significantly to the savory profile and helps carry the spices.
  • Ground Pork: Incorporating ground pork elevates the chili with a different layer of savory, slightly sweet flavor and a tender texture. If ground pork isn’t available, high-quality Italian sausage (mild or hot, depending on your preference) makes an excellent substitute, bringing its own unique blend of seasonings.
  • A Trio of Beans (Pinto, Kidney, and Great Northern): While the “beans in chili” debate rages on, we firmly stand on team beans! They add essential fiber, protein, and a creamy texture that balances the meat. We love the diverse textures and subtle flavors of pinto, kidney, and great northern beans, but feel free to use three cans of your absolute favorite bean varieties. Just ensure they are drained and rinsed to remove excess sodium.
  • Tomato Products (Sauce, Diced Tomatoes, and Paste): The tomato base is fundamental to classic chili. We use a combination of tomato sauce for a smooth, rich liquid, diced tomatoes for texture and a burst of fresh tomato flavor, and tomato paste to intensify the deep, concentrated tomato essence, adding body and umami.
  • Maple Syrup: Our Secret Weapon (shhh!): This is truly the secret ingredient that transforms this chili from good to extraordinary. Just a tablespoon of maple syrup doesn’t make the chili sweet, but rather harmonizes and enhances all the savory spices in our homemade seasoning, bringing out their full potential and adding a subtle complexity.
  • Hot Sauce: A dash of your favorite hot sauce provides a delightful kick and a touch of tang. If you prefer a milder chili or don’t have hot sauce on hand, a splash of apple cider vinegar can offer a similar acidic balance, brightening the overall flavor without adding heat.
  • Homemade Chili Seasoning: Once you experience the vibrant, fresh flavors of our homemade chili seasoning, you’ll likely never return to store-bought packets. It’s infinitely more flavorful and allows you to control the quality and balance of spices. This blend is key to achieving the signature taste of our chili.

Substitutions & Variations to Customize Your Chili

One of the beauties of chili is its adaptability. This Instant Pot chili recipe is a fantastic starting point, but don’t hesitate to customize it to your taste or what you have on hand. Here are some popular substitutions and variations:

  • Protein Swaps: While ground beef and pork create a superb flavor, you can easily adapt the recipe. Feel free to use lean ground chicken, ground turkey for a lighter option, or even a plant-based meat substitute for a vegetarian version. If using leaner meats, you might want to add a bit more olive oil when browning to prevent sticking and add richness.
  • Bean Varieties: Our recipe features pinto, kidney, and great northern beans, but the possibilities are endless! Black beans, cannellini beans, or even a mix of chickpeas can be wonderful additions, each bringing a slightly different texture and flavor profile.
  • Adding More Vegetables: Boost the nutritional content and freshness by incorporating extra vegetables. Diced bell peppers (any color), corn kernels (fresh or frozen), sliced mushrooms, or even zucchini can be added during the sautéing stage or along with the other ingredients. Sweet potatoes also make a great addition for a touch of sweetness and heartiness.
  • Broth Options: We highly recommend beef broth for this Instant Pot chili as its rich, savory notes perfectly complement the ground beef and pork. However, chicken broth or vegetable broth can be substituted 1:1. In a pinch, water can also be used, though it might result in a slightly less robust flavor.
  • Spice Level: Easily adjust the heat by modifying the amount of hot sauce or chili powder. For extra heat, add a pinch of cayenne pepper or finely diced jalapeños (seeds removed for moderate heat, left in for intense heat). For a milder chili, reduce or omit the hot sauce.
  • Smoky Flavor: A dash of liquid smoke or a pinch of chipotle powder can add a wonderful smoky dimension to your chili.

The Magic of Homemade Chili Seasoning

Seriously, do yourself a huge favor and commit to making your own chili seasoning blend. We promise you, the flavor difference between homemade and store-bought packets is monumental. Not only is it fresher and more potent, but you also avoid all the added preservatives, anti-caking agents, and excessive sodium often found in commercial blends. Our homemade seasoning creates a significantly more vibrant and authentic chili experience. Try our simple recipe and keep a batch in your pantry at all times – you won’t regret it!

What You Need for Homemade Chili Seasoning

  • Chili Powder: The cornerstone of any chili blend, providing a deep, earthy base.
  • Garlic Powder: Adds a savory aromatic punch.
  • Ground Cumin: Essential for that classic warm, slightly smoky chili flavor.
  • Smoked Paprika: Contributes a rich, smoky undertone and beautiful color.
  • Salt: Balances and enhances all the other flavors.
  • Ground Pepper: Adds a subtle heat and peppery finish.

Frequently Asked Questions About Instant Pot Chili

Can I make this chili vegetarian or vegan?

Absolutely! This recipe is incredibly versatile for dietary adjustments. To make it vegetarian, simply replace the ground beef and pork with a plant-based meat substitute, extra beans (like black beans or chickpeas), or even a combination of hearty vegetables such as diced sweet potatoes and mushrooms. Ensure you use vegetable broth instead of beef broth for a fully vegan version. You can find our dedicated Instant Pot Vegetarian Chili recipe here.

Is this chili spicy, and how can I adjust the heat level?

Our recipe provides a moderately spicy chili, offering a pleasant warmth without being overwhelming. To increase the heat, you can add more chili powder, a pinch of cayenne pepper, or finely diced jalapeños (with seeds for maximum heat) when sautéing the onions. For a milder chili, simply reduce the amount of hot sauce or chili powder. You can also add a dollop of sour cream or Greek yogurt as a cooling topping if it turns out too spicy for your preference.

What is the secret ingredient in this Instant Pot chili, and why is it used?

Our best-kept secret ingredient for enhancing the depth and complexity of this chili is a little bit of maple syrup. Don’t worry, it won’t make your chili sweet! A small amount of sugar, such as maple syrup, acts as a flavor enhancer, helping to balance the acidity of the tomatoes and bringing out the rich, savory notes of all the spices. It creates a more rounded and harmonious flavor profile, making the chili truly unforgettable.

How do I thicken the chili if it’s too thin?

If your chili is thinner than you prefer after pressure cooking, there are a few easy ways to thicken it. You can switch the Instant Pot back to ‘Sauté’ mode and simmer it uncovered for a few minutes, allowing some liquid to evaporate. Alternatively, mash some of the beans against the side of the pot to release their starches, or create a slurry by mixing a tablespoon of cornstarch with an equal amount of cold water, then stirring it into the simmering chili until it thickens.

Can I use dried beans instead of canned beans?

Yes, you absolutely can use dried beans! However, this will require adjusting the Instant Pot cooking time. Dried beans need to be cooked separately or with a longer pressure cooking cycle before adding the other chili ingredients. For convenience and to stick to the 40-minute total time, canned, pre-cooked beans are recommended for this specific recipe.

Freezer Instructions: Enjoy Chili Later

Instant Pot chili is an ideal candidate for freezing, making it perfect for meal prep or those days when you need a quick, homemade dinner. Freezing chili is similar to freezing other soups and stews, and it’s a great way to have a delicious meal ready in minutes. We’ve even detailed the process in our guide on how to freeze soup, and the same principles apply here:

  1. Cool Completely: Before freezing, ensure your Instant Pot chili has cooled down completely to room temperature. This prevents ice crystals from forming and maintains the chili’s texture and flavor.
  2. Portion and Transfer: Divide the cooled chili into individual servings or family-sized portions. Transfer it into freezer-safe, airtight containers or heavy-duty, gallon-size freezer bags.
  3. Remove Air and Seal: If using bags, press out as much air as possible before sealing to prevent freezer burn. Lay bags flat to freeze for easy stacking. If using containers, leave a small amount of headspace for expansion.
  4. Freeze: Store in the freezer for up to 3 months for optimal flavor and quality.

Storage Instructions: Keeping Your Chili Fresh

Proper storage ensures your Instant Pot chili remains delicious for days, making it excellent for leftovers:

Store your leftover Instant Pot chili in an airtight container in the refrigerator for up to 5 days. Make sure it has cooled completely before refrigerating.

To reheat: For multiple servings, gently place the chili on the stovetop over medium heat, stirring occasionally, until it reaches a simmering boil and is heated through. For individual servings, transfer chili to a microwave-safe bowl and microwave on high for 1 minute and 30 seconds to 2 minutes, or until thoroughly hot, stirring halfway through.

Serving Instructions: Perfect Pairings and Toppings

Chili is a meal in itself, but it truly shines when paired with the right accompaniments and adorned with delicious toppings. Here are some of our favorite ways to serve this Instant Pot chili:

Classic Toppings for Chili:

  • Shredded Cheese: Cheddar, Monterey Jack, or a Mexican blend melt beautifully on hot chili.
  • Sour Cream or Greek Yogurt: Adds a cool, creamy contrast and a touch of tang.
  • Fresh Herbs: Chopped fresh cilantro or parsley brightens the flavors.
  • Diced Avocado: Offers a creamy texture and healthy fats.
  • Chopped Onions: Red or white onions, finely diced, provide a crisp, pungent bite.
  • Jalapeños: Freshly sliced for extra heat, or pickled for a tangy kick.
  • Crushed Tortilla Chips or Fritos: For a satisfying crunch and savory flavor.

Delicious Side Dishes:

  • Cornbread: A classic pairing, perfect for soaking up every last drop of chili. Try our Jalapeno Corn Pudding for a delightful twist.
  • Crusty Bread or Focaccia: Excellent for dipping and adding substance to your meal.
  • Simple Green Salad: A light, refreshing salad with a vinaigrette dressing can cut through the richness of the chili.
  • Rice: Serve chili over a bed of fluffy white or brown rice for a heartier meal.
  • Baked Potatoes or Sweet Potatoes: Turn your chili into a loaded baked potato for a comforting and complete dish.

Ingredients

  • 1 tablespoon olive oil

  • 1/2 large white onion, finely diced

  • 1 lb. ground beef, we used 85% fat

  • ¼ lb. ground pork

  • 3 cloves garlic, minced

  • 1 15-oz. can pinto beans, drained and rinsed

  • 2 15-oz. cans kidney beans, drained and rinsed

  • 1 15-oz. cans great white northern beans, drained and rinsed

  • 1 oz. can tomato sauce

  • 1 15-oz. can diced tomatoes

  • 3 tablespoons tomato paste

  • 1 tablespoon maple syrup

  • 1 tablespoon hot sauce

  • ¼ cup chili powder

  • 1 tablespoon garlic powder

  • 1 tablespoon ground cumin

  • 1/2 tablespoon smoked paprika

  • 1 teaspoons salt

  • 1/4 teaspoon ground black pepper

  • 1 cup beef broth, chicken broth or water works too

Instructions

  • Initiate the sauté feature on your Instant Pot and add 1 tablespoon of olive oil to the inner pot. Allow the oil to heat until it shimmers.
  • Once the olive oil is fragrant, add the finely diced white onion to the pot. Sauté the onion for approximately 4 minutes, stirring occasionally, until it becomes soft and translucent. This step builds the aromatic foundation of your chili.
  • Stir in the minced garlic and continue to sauté with the onion for another 30 seconds. Be careful not to burn the garlic, as it can quickly become bitter.
  • Now, add both the ground beef and ground pork to the pot. Use a wooden spoon or spatula to break the meats into small, uniform pieces. Cook, stirring frequently, until the meat is partially browned. It doesn’t need to be fully cooked through at this stage.

  • Turn off the sauté function. Add all the remaining ingredients to the pot: the drained and rinsed pinto, kidney, and great northern beans, tomato sauce, diced tomatoes, tomato paste, maple syrup, hot sauce, homemade chili seasoning, and beef broth. Stir everything thoroughly until all ingredients are well combined. Make sure to scrape any browned bits from the bottom of the pot to prevent a “burn” notice.
  • Secure the lid on your Instant Pot, ensuring it is properly locked. Rotate the pressure release valve to the “Sealing” position. Select the “Manual” or “Pressure Cook” function, set it to “High Pressure,” and adjust the cooking time to 5 minutes. The Instant Pot will take approximately 10-15 minutes to build pressure before the 5-minute countdown begins.
  • Once the cooking time is complete and the timer beeps, perform a quick release of pressure by carefully turning the pressure release valve to the “Venting” position. Stand clear of the steam. Once all the steam has been released and the float valve drops, remove the lid. Give the chili a good stir to combine all the delicious flavors and ensure an even consistency.
