As enthusiasts of hearty, satisfying desserts, especially those classic Midwestern bars, we can confidently say these Protein Scotcheroos are designed to impress. They capture that irresistible blend of butterscotch and rich chocolate flavor you adore, while elevating the nutritional profile. Our secret lies in the double dose of chocolate protein powder, infused into both the crunchy rice crispy base and the decadent chocolate topping, making these bars not just a treat, but a smart choice for any time of day.
The Anatomy of Our Protein Scotcheroos: Layers of Deliciousness
These healthier scotcheroos are artfully constructed in two distinct, yet perfectly complementary, layers. The foundation is a robust peanut butter rice crispy layer, which provides a satisfying crunch and a rich, nutty flavor. This base is a harmonious mixture of crispy rice cereal, creamy peanut butter, natural honey for sweetness and binding, a touch of coconut oil for texture, and, of course, a generous serving of protein powder to boost its nutritional value.
Crowning this delightful base is a gorgeously glossy chocolate layer. This topping isn’t just any chocolate; it’s a luscious blend of classic butterscotch and indulgent semi-sweet chocolate chips, melted down with a hint of coconut oil. Crucially, this layer also incorporates protein powder, ensuring that every element of these bars contributes to their high-protein status and utterly irresistible taste. The result is a bar that’s not only incredibly flavorful but also remarkably satisfying.

Customizing Your Scotcheroos: Substitutions & Variations
One of the best aspects of these Protein Scotcheroos is their versatility. While the core recipe is a winner, feel free to get creative with these suggested substitutions and variations to tailor them to your preferences or dietary needs:
- Chocolate Chips: For those with dairy sensitivities or seeking a vegan option, feel free to swap out traditional semi-sweet chocolate chips for a high-quality dairy-free variety. If you prefer a milder sweetness, milk chocolate chips can also be used. However, we strongly recommend keeping the butterscotch chips as they are absolutely essential to the signature, beloved flavor profile of scotcheroos. Their unique buttery, caramel-like notes are what truly make this dessert special.
- Protein Powder: Our recipe has been successfully tested with various types of protein powder, including collagen powder, which yielded fantastic results. This means you have the flexibility to use almost any type of protein powder you prefer—whey, casein, or your favorite plant-based blend (like pea or rice protein). Consider the flavor too; a chocolate-flavored protein powder in the topping will intensify the chocolatey goodness, while vanilla protein powder works wonderfully in the base for a balanced taste. Experiment with what you have on hand or what best suits your dietary regimen.
Beyond ingredients, you can also have fun with how you present these bars. Instead of traditional squares, why not cut them into playful triangles for a unique touch? Or, if you’re serving a larger gathering or simply prefer smaller portions, slice them into more bite-sized pieces. This makes them perfect for parties, lunchboxes, or a quick, satisfying snack.

Expert Tips for Protein Scotcheroo Perfection
Mastering the Melt with a Double Boiler: For the silkiest, most perfectly melted chocolate topping, we highly recommend using a double boiler. This classic kitchen technique is the ultimate way to achieve even melting and is crucial for preventing chocolate from burning or seizing. A double boiler works by gently heating ingredients over indirect heat. It consists of two pots: a larger pot at the bottom holds simmering water, while a smaller pot or heat-proof bowl rests securely on top, containing your chocolate mixture. The steam from the simmering water below provides a consistent, gentle warmth that melts the chocolate slowly and evenly, without direct exposure to high heat. If you don’t have a dedicated double boiler, a sturdy metal or glass bowl nested over a saucepan with an inch or two of simmering water works just as effectively. This method ensures your chocolate topping will be flawlessly smooth and glossy.
Adjusting Peanut Butter Consistency with Coconut Oil: The texture of natural peanut butter can vary significantly between brands, especially in terms of oiliness. If you find your peanut butter is on the thicker, less “drippy” side, don’t hesitate to add a little extra coconut oil to the peanut butter mixture during the heating process. This will help smooth out the mixture, making it easier to combine with the rice crispies and ensuring a consistent, well-bound base for your scotcheroos. Start with half a tablespoon and add more if needed, until you reach a smooth, easily workable consistency.
Avoid Overheating: Whether you’re melting the peanut butter mixture or the chocolate topping, always keep the heat on low to medium-low. High heat can easily burn both peanut butter and chocolate, leading to a bitter taste and grainy texture. Patience is key; gentle, consistent heat will yield the best results for both layers, ensuring a smooth, delicious outcome.

Storage & Freezer Instructions for Lasting Freshness
Proper storage is essential to maintain the perfect texture and freshness of your Protein Scotcheroos. After slicing your bars into desired portions, transfer them to an airtight container. They can be stored in the refrigerator or the freezer, depending on how long you wish to keep them and your preferred texture.
Refrigerator Storage: Storing the scotcheroos in the fridge will keep them firm and fresh for up to one week. The cool temperature helps them hold their shape beautifully. We do not recommend storing these bars at room temperature. The coconut oil in both layers will soften significantly at warmer temperatures, causing the bars to lose their structural integrity and become overly sticky or greasy.
Freezer Storage for Extended Freshness: For the longest possible shelf life and a wonderfully firm, chewy texture, we highly recommend storing your Protein Scotcheroo bars in the freezer. When stored in an airtight container or a heavy-duty freezer bag (a gallon-size bag works perfectly for many batches), they will remain fresh and delicious for up to three months. You can grab them directly from the freezer for a super chewy snack or let them sit out for a few minutes to slightly soften before enjoying. Freezing is also an excellent option for meal prepping healthy snacks in advance, ensuring you always have a protein-packed treat on hand.

Ingredients
Peanut Butter Layer
- 2 cups all-natural, drippy peanut butter
- ¾ cup honey
- 1 tablespoon coconut oil
- ⅓ cup vanilla protein powder, we used Whey Garden of Life
- 6 cups rice crispies
Chocolate Layer
- ¼ cup coconut oil
- 1 cup semi-sweet chocolate chips
- ⅓ cup butterscotch chips
- ⅓ cup chocolate protein powder, we used Whey Garden of Life
- Coarse sea salt, for topping
Instructions
-
Line a 9×13-inch pan with parchment paper, allowing some overhang for easy removal. Set the prepared pan aside.
-
In a small saucepan, combine the peanut butter, honey, and coconut oil. Heat this mixture over low heat, stirring continuously until the ingredients are fully melted and smoothly combined, achieving a glossy consistency. Be careful not to overheat.
-
Remove the saucepan from the heat. Transfer the warm peanut butter mixture to a large mixing bowl. Add the protein powder and rice crispies to the bowl. Using a sturdy wooden spoon or your hands (lightly dampened to prevent sticking), mix thoroughly until all the rice crispies are evenly coated and well combined with the peanut butter mixture.
-
Pour the rice-crispy mixture into the parchment-lined 9×13-inch pan. Press the mixture down very firmly and evenly to the bottom of the pan using your hands or the back of a spatula. This step is crucial for a cohesive base. Set the pan aside.
-
Prepare a double boiler on your stovetop. Fill the bottom pot with a few inches of water and bring it to a gentle simmer over medium-low heat. Place the top pot or heat-proof bowl over the simmering water. Add the coconut oil, semi-sweet chocolate chips, and butterscotch chips to the top pot. As the mixture begins to melt, stir the ingredients constantly with a rubber spatula until everything is fully melted and achieves a smooth, glossy consistency.
-
Once the chocolate and butterscotch chips are completely melted and smooth, slowly add the chocolate protein powder to the mixture. Add it gradually, stirring thoroughly after each addition until fully combined, before adding more protein powder. Continue until all the protein powder is incorporated and the chocolate mixture is smooth again. Remove the top pot from the heat.
-
Carefully pour the melted chocolate topping evenly over the pressed rice crispy base in the pan. Use a spatula to spread the chocolate layer smoothly from edge to edge. If desired, sprinkle a pinch of coarse sea salt over the chocolate topping for a delightful flavor contrast.
-
Place the pan in the refrigerator for at least 1-2 hours, or until the chocolate topping is completely set and firm. This allows the bars to solidify and makes them easy to cut cleanly.
-
Once set, lift the scotcheroos out of the pan using the parchment paper overhang. Cut them into squares, triangles, or bite-sized pieces. Serve immediately for a satisfying treat. For softer bars, store them on the countertop in an airtight container for up to 2 days (if your kitchen is cool). For a firmer bar, which is often preferred, store them in the refrigerator in an airtight container for up to a week, or in the freezer for longer-term storage.
Tips & Notes for Success
- Double Boiler Essentials: A double boiler is your best friend for melting chocolate smoothly. It uses indirect heat from simmering water to melt ingredients gently, preventing burning or seizing. If you don’t have a dedicated double boiler, simply place a heat-proof bowl (metal or glass) over a saucepan containing a few inches of simmering water. Ensure the bottom of the bowl does not touch the water.
- Peanut Butter Consistency: Natural peanut butter can vary in consistency. If yours is particularly thick or less “drippy,” you might need to add an extra half to a full tablespoon of coconut oil to the peanut butter mixture. This will help create a smoother, more pliable base that’s easier to mix and press into the pan.
- Temperature Control is Key: When melting both the peanut butter mixture and the chocolate topping, always use low to medium-low heat. Overheating can cause both ingredients to burn or seize, drastically affecting the flavor and texture of your scotcheroos. Stir frequently and be patient; gentle heat yields the best results.
- The Power of Parchment Paper: Don’t skip lining your pan with parchment paper! It makes lifting the fully set bars out of the pan incredibly easy and allows for clean, precise cutting.
