  6. Check Doneness & Stir: Open the Instant Pot and give the soup a good stir. Use a fork to test both the sweet potato and carrot chunks to ensure they are cooked all the way through and tender. Sweet potatoes tend to cook faster than carrots, so the carrots may be slightly firmer. If the vegetables are not quite tender enough for your liking, close the lid and cook for an additional 1-2 minutes on high pressure.
  7. Blend to Smoothness: Now it’s time to blend for that signature creamy texture! You can either carefully transfer the soup to a Vitamix or high-speed food processor, or use an immersion blender directly in the Instant Pot. Blend until the soup is completely smooth and creamy. At this point, if you find the soup too thick, feel free to add a little more vegetable broth or water until it reaches your desired consistency.
  8. Finishing Touch: Stir in the 2 tablespoons of fresh lime juice and blend one more time to incorporate it fully. This brightens the flavors beautifully.
