  • 2 pucks Boursin cheese, any flavor

  • Minced fresh chives
  • Crackers, crostini, or raw vegetables (for dipping)

Instructions

  • Step 1: Prepare Your Oven and Dish. Preheat your oven to 400ºF (200ºC). In an 8×8-inch baking dish, combine the olive oil and tomato paste. Whisk them together until a smooth, uniform paste forms at the bottom of the dish. This creates a flavorful base for your vegetables.
  • Step 2: Assemble the Vegetables. Prepare the garlic by carefully trimming just the very tip off the head, ensuring the cloves remain largely intact within their skin for roasting. Add the diced white onion, sea salt, black pepper, cherry tomatoes, and the trimmed head of garlic to the baking dish. Toss all these ingredients together thoroughly with the olive oil and tomato paste until everything is well coated. This ensures every component gets infused with flavor as it roasts.
  • Step 3: Add Boursin and Bake. Create two small spaces amongst the tomatoes in the baking dish and carefully nestle the two pucks of Boursin cheese into these spots. Cover the baking dish tightly with foil. Bake in the preheated oven for 25-30 minutes, or until the Boursin cheese is beautifully browned and bubbly, and the cherry tomatoes have visibly burst and softened.
