Crafting Perfection: How to Make Sweet Potato Burgers from Scratch

Creating a delicious, robust burger with a sweet potato base is one of our favorite kitchen adventures. While it does involve a little extra love and preparation, we promise you, the rich flavors and satisfying texture are absolutely worth every moment! Let’s walk through the simple steps to bring these magnificent burgers to life.

Step 1: Preparing Your Sweet Potato Puree

The foundation of these incredible burgers is a velvety smooth sweet potato puree. Making it from scratch at home is surprisingly simple and yields the best flavor and texture. For a comprehensive guide, check out our detailed, step-by-step tutorial on how to make sweet potato puree. In short, you’ll want to bake your sweet potatoes in the oven until they are perfectly tender and soft enough to easily mash. Roasting intensifies their natural sweetness and creates a drier, more concentrated puree, which is ideal for burger binding.

  • Preheat your oven to 375ºF (190ºC).
  • Wash and halve your sweet potatoes. Drizzle lightly with olive oil and prick them with a fork.
  • Place them cut-side down on a baking sheet.
  • Roast for 50-60 minutes, or until fork-tender.
  • Allow them to cool slightly before scooping out the flesh and mashing until smooth.

Having a well-prepared sweet potato puree is key to the texture and flavor of your burgers, ensuring they hold together beautifully while offering that signature sweet and earthy taste.

Step 2: Assembling and Forming Your Patties

Once your luscious sweet potato puree is ready, it’s time to gather the remaining ingredients and bring your burger mixture to life. In a generously sized mixing bowl, combine the mashed sweet potato with finely minced purple onion, cooked quinoa, diced jalapeño for a hint of heat, crunchy sunflower seeds, oat flour (which acts as a binding agent), a large egg, and a blend of aromatic spices. Mix everything thoroughly until well combined. The mixture should be moist enough to hold its shape but not overly wet.

To form uniform patties, use a 1/2 cup measuring scoop. This helps ensure each burger is consistently sized for even cooking. Gently scoop the mixture into your hands and shape it into sturdy patties, approximately 1-inch thick. If the mixture feels a bit sticky, lightly dampen your hands with water. This simple trick makes forming the patties much easier and prevents them from adhering to your hands.

The combination of sweet potato, quinoa, and black beans creates a wonderful texture profile, while the addition of onion, jalapeño, and spices infuses each bite with a depth of flavor. Sunflower seeds add an extra layer of crunch, making these burgers truly special.

Step 3: Baking for Structure and Tenderness

Baking is a crucial step that helps set the patties and ensure they hold their shape beautifully. Arrange your carefully formed patties on a lightly greased baking sheet. We recommend using coconut oil cooking spray or a thin layer of olive oil to prevent sticking. Bake the patties in your preheated oven at 375ºF (190ºC) for a total of approximately 30 minutes, remembering to gently flip them halfway through the baking time. This initial bake gives them structural integrity and cooks them through, preparing them for the next step.

Step 4: Pan-Frying for That Perfect Crispy Finish

To achieve that irresistible crispy exterior and golden-brown perfection, a quick pan-fry after baking is essential. Heat a teaspoon of olive oil in a nonstick skillet over medium-low heat. Once hot, carefully place your baked patties in the pan. Pan-fry each side for a few minutes, allowing them to develop a beautiful crust and deepening their savory flavor. This final step elevates the texture, giving you a satisfying crunch with every bite, contrasting wonderfully with the tender interior.

Meal Prep Made Easy: Freezer Instructions

You’ll be thrilled to know this recipe yields a generous 12 patties, making it perfect for meal prepping! If you find yourself with more burgers than you can enjoy in a few days, fret not. These veggie burgers are wonderfully freezer-friendly, ensuring you have healthy, homemade meals ready when you need them. Here’s a simple guide on how to properly freeze your veggie burgers for future enjoyment:

  1. Cool Completely: Before wrapping, allow your cooked sweet potato burgers to cool down to room temperature. This prevents condensation and freezer burn.
  2. Individual Wrapping: Wrap each burger tightly with plastic wrap, pressing out as much air as possible. This initial layer protects against moisture loss.
  3. Double Protection: For an extra layer of protection, wrap each plastic-wrapped burger again with a piece of aluminum foil. This helps prevent freezer burn and keeps flavors locked in.
  4. Storage Bag: Transfer the individually wrapped burgers into a gallon-sized freezer-safe plastic bag or an airtight stasher bag. Remove any excess air from the bag before sealing.
  5. Freeze: Place the bag in the freezer. Your sweet potato burgers will keep well for up to 3 months.

To thaw: Simply transfer the desired number of frozen patties to the refrigerator overnight. Alternatively, you can unwrap them and defrost them in the microwave on a low setting, flipping halfway through, until defrosted.

Having a stash of these healthy veggie burgers in your freezer makes weeknight dinners, quick lunches, or impromptu gatherings a breeze. Enjoy the convenience of wholesome, homemade food anytime!

Ingredients

  • 2 cups roasted sweet potato, (mashed, from 3-4 medium sweet potatoes)
  • 15 oz. canned black beans, (drained and rinsed)
  • 1/2 cup minced purple onion
  • 2 cups cooked quinoa, (~1 cup uncooked)
  • 2 tablespoons finely diced jalapeño
  • 1/3 cup roasted/unsalted sunflower seeds
  • 1/4 cup + 2 tablespoons oat flour
  • 1 large egg
  • 1 tablespoon ground cumin
  • 2 teaspoons garlic powder
  • 1/4 teaspoon sea salt
  • 1 teaspoon olive oil

Instructions

  • Prepare Sweet Potatoes: First, preheat your oven to 375ºF (190ºC) and lightly spray a baking sheet with coconut oil cooking spray. Cut the sweet potatoes in half, drizzle with a little olive oil, and prick them several times with a fork. Place them skin-side down on the baking sheet and roast for 50-60 minutes, or until completely soft. Allow them to cool for about 10 minutes, then scoop out the flesh and mash it in a bowl until smooth. You’ll need 2 cups of this mashed sweet potato.
  • Combine Ingredients: While the sweet potatoes are roasting, prepare the remaining ingredients. In a large mixing bowl, combine the drained and rinsed black beans, minced purple onion, cooked quinoa, finely diced jalapeño, sunflower seeds, oat flour, egg, ground cumin, garlic powder, and sea salt. Mix thoroughly to ensure all ingredients are well incorporated.
  • Form Patties: Once the mashed sweet potato is ready and slightly cooled, add 2 cups of it to your main mixture. Combine everything very well until a cohesive, workable dough forms. Lightly wet your hands to prevent sticking. Use a 1/2 cup measuring scoop to portion out the mixture, then gently form each portion into a 1-inch thick burger patty. Place the formed patties on a fresh, lightly greased baking sheet.
  • Bake Patties: Preheat your oven to 375ºF (190ºC) again (if it cooled down). Bake the patties for 15 minutes on one side, then carefully flip them and bake for another 15 minutes, for a total baking time of 30 minutes. This helps them firm up and cook through.
  • Pan-Fry for Crispiness: When the burgers are done baking, heat about a teaspoon of olive oil in a nonstick skillet over low to medium heat. Once the oil is shimmering, carefully transfer the baked patties to the skillet.
  • Achieve Golden Brown: Cook the patties in the fry pan for 4-5 minutes on each side, or until they develop a beautiful golden-brown crust and are heated through.
  • Serve and Enjoy: Once your burgers are perfectly cooked and crispy, transfer them to plates. Add your favorite toppings and serve immediately!

Tips & Notes

  • Nutrition information provided is specifically for one burger patty and does not include any bun or additional toppings you might add.
  • For a gluten-free option, ensure your oat flour is certified gluten-free.
  • To make these burgers vegan, substitute the egg with a “flax egg” (1 tablespoon ground flaxseed meal mixed with 3 tablespoons water, let sit for 5 minutes).
  • Adjust the amount of jalapeño to your spice preference, or omit it entirely for a milder burger.
  • If your mixture feels too wet, add a little extra oat flour (1 tablespoon at a time) until it’s easy to form patties. If it’s too dry, a tiny bit of water or vegetable broth can help.
