Ingredients

Turkey Brine

  • 1 cup water
  • ¼ cup kosher salt
  • 1.75-2 lb. boneless split turkey breast

Stuffing

  • ¼ lb. ground Italian pork sausage
  • 1 tablespoon olive oil
  • ¼ large white onion, minced
  • ½ teaspoon sea salt
  • 2 cloves garlic, minced
  • ¼ cup minced carrot (1 small carrot)
  • ¼ cup minced celery (1 small celery stalk)
  • 2 cups cubed stuffing or dried bread chunks (we used Pepperidge Farm brand)
  • 1 teaspoon dried thyme
  • 1 cup chicken broth

Other Ingredients

  • ¼ cup cranberry sauce
  • 2.5 tablespoons turkey seasoning
  • ½ cup chicken broth
  • 1 tablespoon salted butter

Instructions

  1. Prepare a turkey brine. Bring 1 cup of water and ¼ cup of kosher salt to a boil and whisk until the salt is dissolved. Set aside to cool completely.
  2. Place the turkey breast in a large bowl or plastic container (with a lid if possible). Cover the turkey with cold water, then pour the cooled salt water brine over it. Cover and refrigerate overnight. If overnight brining isn’t possible, brine for at least 2-4 hours.

  3. Heat a large skillet over medium-high heat and add the ground Italian pork sausage. Break the sausage into small pieces with a spoon and cook until partially browned. Drain any excess fat. Add the olive oil and minced onion to the skillet, and season with ¼ teaspoon of sea salt. Toss and sauté for 2-3 minutes until the onion begins to soften.
  4. Stir in the minced garlic, carrots, and celery to the pan with the sausage and onions. Continue to sauté for another 4-5 minutes until the vegetables are tender-crisp.

  5. Remove the skillet from the heat. Stir in the cubed stuffing (or dried bread chunks), and dried thyme with the sausage and vegetable mixture. Pour in 1 cup of chicken broth, then cover the skillet and let it rest for 5-7 minutes, or until all the liquid has been absorbed by the stuffing. Fluff the stuffing with a fork and set aside to cool slightly.

  6. Preheat your oven to 400ºF (200ºC). Line a large baking sheet with parchment paper for easy cleanup and to prevent sticking.
  7. Remove the turkey breast from the brine and pat it thoroughly dry with paper towels. Place the turkey breast on a large cutting board. Using a sharp knife, carefully cut the breast down the middle horizontally, without cutting all the way through, to butterfly it open. Lay a piece of plastic wrap over the butterflied turkey and pound it evenly with a meat mallet or rolling pin to about ½ inch thickness. This creates a uniform surface for rolling.

  8. Evenly spread the cranberry sauce over the flattened turkey breast, leaving a small border around the edges. Then, spoon the prepared sausage stuffing over the cranberry layer, spreading it out to cover the surface. Don’t worry if you have a little extra stuffing; it can be baked separately alongside the roulade.

  9. Starting from one of the shorter ends of the turkey breast, carefully roll the stuffing and cranberry sauce into a tight roulade. It’s perfectly fine if a small amount of stuffing gently spills out during this process.
  10. Use two or three pieces of kitchen twine to securely tie the roulade in several places. This prevents it from unrolling and helps it hold its beautiful shape during the baking time.
  11. If you have any excess stuffing, spoon it onto the prepared baking sheet and spread it out. Carefully transfer the tied roulade to the baking sheet, placing it directly on top of the spread-out stuffing (if using).
