Hello there, lovely readers, and welcome back to our kitchen here at Fit Foodie Finds. Many of you might recognize me, Linley, as the enthusiastic voice and lively presence often seen in the background of our Fit Foodie snaps. Yes, that’s me – the one-third of the incredible Team Fit Foodie, and I must say, it’s a team I’m immensely proud to be a part of. We believe in creating food that fuels both body and soul, and today’s recipe perfectly embodies that philosophy.

Meet Linley: The Heartbeat of Fit Foodie Finds
Over time, we’ve received countless questions about the “loud girl” on our social media and what my role truly entails within Team Fit Foodie. So, we thought, what better way to introduce myself than with a fun, engaging “Get to Know Linley” series? And since my absolute go-to snack, satisfying meal, and all-around favorite food happens to be toast, it was a no-brainer to launch this series as TOAST TUESDAYS with Linley! Prepare to get excited, because we’re diving deep into toast territory, starting with a recipe that’s close to my heart.
But before we fully immerse ourselves in the wonders of toast, let’s take a moment for you to get to know the person behind these savory creations. To kick things off simply, here are some fun facts about me:
- My Full Name: Linley Scot Richter (yes, only one ‘t’ in Scot!). It’s a name with a story, just like every person!
- My Hometown: Fridley, Minnesota. A place that shaped my love for community and good food.
- Where I Feel Most Myself: Traveling and cooking. These two activities ignite my spirit and allow me to truly express myself. There’s nothing quite like exploring new cultures through their cuisine or creating something new in my own kitchen.
- International Living: I’ve had the incredible experience of living in a foreign country – the vibrant Dominican Republic. It broadened my perspective and deepened my appreciation for diverse flavors.
- My Quirky Obsessions: I am slightly, and proudly, obsessed with arugula (as you’ll soon discover!), a perfect cup of coffee, and adorable schnauzers. Each brings a unique joy to my life!
- My Favorite Person: My brother. Family is everything, and he’s truly my rock.
- My Personality in Three Words: Weird, loud, and proud of it! I believe in embracing who you are, unapologetically.
- A Unique Trait: I have a freckle on my right front gum that almost everyone mistakes for a speck of food. It’s a fun little quirk!
- My Happy Place: Unsurprisingly, it’s my kitchen (or my best friend Lee’s kitchen, which feels just like home). It’s where creativity flows and deliciousness happens.
My passion for food isn’t something I developed overnight; it’s deeply rooted in my family history. Growing up, my dad was an exceptional cook, always experimenting and creating incredible meals, while my mom is a truly fabulous baker whose treats were legendary. Beyond them, I was also inspired by two amazing uncles (who own the charming river house we often visit). They took me under their wing, showing me not just how to navigate a kitchen but also how to explore the culinary world at large. I truly get my love for all things food from this incredible family.

Eight Years, One Unbreakable Bond: Linley and Lee
I’ve been working with Team Fit Foodie for about two years now, but my friendship with Lee goes back a whopping eight years! As Lee once beautifully described it in her Life Lately post, it was “love at first sight.” You know those rare individuals in your life with whom you can go months without seeing, yet when you reunite, it feels like no time has passed at all? That’s Lee for me. She’s my person, my squad mate, someone who mirrors my weirdness and dreams just as big – if not bigger! There’s no one else I’d rather embark on an epic road trip with, or even brave a deathly illness on a plane home from Mexico. Our bond is truly special, foundational to everything we do here at Fit Foodie Finds.
Working on Team Fit Foodie is genuinely a dream come true. I wake up every day excited and inspired by my job. My current role involves a dynamic mix of social media strategy, innovative recipe development, meticulous event planning, and all the exciting bits in between that keep our brand thriving. It’s not always easy – there are challenges, tight deadlines, and constant learning curves – but that’s precisely what I love about it. Every day offers an opportunity to grow, to be pushed creatively, and to expand my knowledge. And the best part? I’ve never had a job before where hourly high fives are a regular, cherished occurrence! It speaks volumes about the positive, supportive, and energetic atmosphere we’ve cultivated at Fit Foodie Finds.

The Star of the Show: Egg and Arugula Toast
Now, let’s get down to the real reason you’re here: the toast! As I mentioned, my love for arugula runs deep. Seriously, ask anyone who knows me – it’s practically a personality trait. So, it’s only natural that the very first toast featured on a “Toast Tuesday with Linley” should be generously topped with my beloved peppery greens. This recipe is a true reflection of my culinary preferences and a fantastic way to introduce you to my savory side.

Lee and I often playfully debate our breakfast preferences. She’s undeniably a sweet breakfast aficionado, while I am wholeheartedly a savory breakfast girl. Lee’s passion for a bowl of oatmeal in the morning is perfectly matched by my unwavering love for a hearty, savory toast. Give me that delightful, slightly peppery arugula, thinly sliced, crisp radishes, and a perfectly fried egg crowning a slice of toast any day of the week. This combination isn’t just a meal; it’s a symphony of textures and flavors that truly satisfies my morning cravings.

Why This Toast is Your Next Go-To Breakfast
Toast, in its purest form, is the ultimate quick breakfast canvas, offering endless possibilities for toppings and flavor combinations. Our Egg and Arugula Toast stands out not just for its incredible taste, but also for its remarkable nutritional profile. In one delightful swoop, you get a generous serving of fresh greens from the arugula, a substantial boost of protein from the fried egg, and essential whole grains from your chosen bread. It’s a complete, well-rounded meal that requires minimal effort, making it a no-brainer for anyone looking to whip up a healthy and satisfying breakfast in a hurry.
Beyond its health benefits and ease of preparation, this toast is also a feast for the eyes. The vibrant green of the arugula, the cheerful pink of the radishes, and the sunny yolk of the egg create a truly beautiful meal that’s almost too pretty to eat – almost! Toast Tuesday – Egg and Arugula Toast
Print Recipe
Ingredients
- 1 piece of whole grain bread, or bread of choice
- 1/2 cup arugula, packed
- 2 radishes, sliced
- 1 large egg
- 1 tablespoon olive oil
- 1 tablespoon balsamic vinegar
- Salt and pepper, to taste
Instructions
- First, in a small to medium-sized bowl, gently toss the arugula with the olive oil and balsamic vinegar. Season generously with salt and pepper to your taste preferences. Set this vibrant mix aside while you prepare the other elements.
- Next, place a medium frying pan over a low to medium heat setting. Lightly spray the pan with cooking spray or add a small amount of oil to prevent sticking.
- Carefully crack the egg into the heated frying pan. Cover the pan with a lid and cook the egg to your desired yolk consistency. For a perfectly runny yolk, cook for about 3-4 minutes. Adjust cooking time for a firmer yolk.
- While your egg is cooking to perfection, toast your chosen bread in a toaster or under a broiler until it reaches your preferred level of golden crispness.
- Lastly, once the toast is ready, assemble your masterpiece: layer the dressed arugula generously onto the toast, arrange the sliced radishes on top, and crown it all with your freshly fried egg. Finish with an extra sprinkle of salt and pepper if desired.
- ENJOY this simple yet sophisticated breakfast!
