Coupled with a quality protein powder, this pudding helps with muscle recovery and sustained energy. The rich coconut milk adds healthy fats and a velvety texture, making every spoonful a creamy, dreamy experience. It’s a true testament to how healthy eating can be utterly delicious and deeply satisfying.
Key Ingredients for the Perfect Protein Coconut Cream Pie Chia Pudding
Crafting this irresistible pudding requires a few essential ingredients, each playing a crucial role in achieving its signature flavor and texture. Here’s a closer look at what you’ll need to create this culinary masterpiece:
- Chia Seeds: These tiny black seeds are the foundation of our pudding. When submerged in liquid, they absorb up to 10-12 times their weight, forming a gel-like consistency that’s characteristic of chia pudding. Beyond their unique texture, chia seeds are a nutritional marvel, providing a significant source of fiber, protein, and omega-3 fatty acids, which are vital for heart health and brain function. They give the pudding its delightful, luscious texture.
- Vanilla Protein Powder: To truly make this a protein-packed treat, a good quality vanilla protein powder is key. We particularly recommend using a vanilla coconut collagen protein powder for an enhanced flavor profile and additional benefits, but any vanilla-flavored protein powder you prefer will work beautifully. This ingredient significantly boosts the protein content, making the pudding more satisfying and beneficial for muscle repair and growth.
- Unsweetened Coconut Milk: For the ultimate creamy texture and rich coconut flavor, full-fat coconut milk is recommended. You can use either canned or cartoned varieties. The fat content in full-fat coconut milk contributes to the pudding’s luxurious mouthfeel, ensuring it’s wonderfully smooth and decadent.
- Agave Syrup: This natural sweetener is used in both the chia pudding and the homemade coconut whip. Agave syrup has a neutral flavor that complements the coconut beautifully without overpowering it, providing just the right amount of sweetness.
- Shredded Unsweetened Coconut: Adding unsweetened shredded coconut directly into the pudding mixture intensifies the natural coconut flavor without making the dish overly sweet. It also introduces a subtle chewiness that adds another layer of texture.
- Coconut Chips: These crispy chips serve as the perfect crunchy topping. They are essentially toasted coconut flakes, offering a satisfying textural contrast to the creamy pudding and a concentrated burst of toasted coconut flavor.
- Coconut Cream: This is the star ingredient for our heavenly coconut whip topping. For best results, ensure your can of coconut cream (or full-fat coconut milk) is thoroughly refrigerated. This separation allows you to scoop out the thick, solid cream, which whips into a light and fluffy topping akin to traditional whipped cream.

Creative Variations & Simple Substitutions
One of the best aspects of this creamy coconut chia pudding is its adaptability. While the original recipe is a masterpiece, you can easily customize it to suit your taste preferences or dietary needs. Don’t hesitate to experiment and make it your own!
- Protein Powder Flavors: While vanilla protein powder provides a classic base, feel free to switch things up. Imagine a rich chocolate chia seed pudding by replacing vanilla protein with chocolate protein powder, or even adding a tablespoon of cacao powder to the mix. Keep in mind that different brands and flavors of protein powder will subtly alter the overall taste of your pudding.
- Sweetener Alternatives: If agave syrup isn’t readily available, maple syrup or honey can be excellent substitutes. Each will impart a slightly different nuance to the flavor profile – maple syrup offers a warmer, earthy sweetness, while honey introduces floral notes. All three will yield a delicious result.
- Milk Options: No coconut milk on hand? No problem! Other plant-based milks such as almond milk, oat milk, soy milk, or cashew milk can be used. Be aware that these alternatives will change the flavor and potentially the texture of the pudding, as they typically have lower fat content and different flavor characteristics compared to full-fat coconut milk. For instance, almond milk will result in a lighter, less creamy pudding, while oat milk will add a hint of its distinct grain flavor.
- Fun Additions: This recipe is a fantastic canvas for additional ingredients. Stir in some fresh fruit like berries or sliced mango for a burst of freshness and extra vitamins. Chocolate chips (dark or milk, depending on your preference) can add a delightful richness. For a more indulgent twist, swirl in a tablespoon of your favorite nut butter, such as peanut butter or almond butter, to create a nutty, protein-packed variation.

Frequently Asked Questions (FAQ)
What are coconut chips?
Coconut chips are essentially larger, thicker flakes of coconut meat that are typically toasted until golden brown and crispy. In this recipe, we elevate the experience by making our own homemade coconut chips. This is achieved by simply roasting shredded coconut in the oven for a short period, typically 30 seconds to a minute, until it turns a beautiful golden color and develops a satisfying crunch. This process not only enhances their nutty flavor but also provides a wonderful textural contrast to the soft, creamy chia pudding.
Why is my chia seed pudding not thickening?
This recipe is designed to yield a perfectly thick and creamy consistency. However, if you’ve made substitutions, particularly with the type of milk, the texture might vary. If your pudding appears too thin, the simplest solution is to add more chia seeds. For every 1 teaspoon of additional chia seeds, we recommend adding about a tablespoon of liquid (or just more chia seeds if the liquid content seems sufficient). Stir well and allow it to sit for an additional 30 minutes to an hour, or until it reaches your desired thickness. The longer chia seeds sit, the more liquid they absorb, resulting in a denser pudding.
Is this coconut milk chia pudding good for meal prep?
Absolutely, it is! This recipe was crafted with convenience and meal prep in mind. Preparing a batch of these creamy chia pudding cups on a Sunday can provide you with delicious and nutritious breakfasts or snacks for the entire week. It’s an incredibly convenient way to ensure you start your day with a satisfying, wholesome meal that requires no morning effort. The pudding holds up beautifully in the refrigerator, making it a reliable and delicious option for those busy mornings or afternoon hunger pangs. Just grab a cup, and you’re good to go!
Storage and Freezer Directions
These Protein Coconut Cream Pie Chia Pudding cups are incredibly convenient for make-ahead meals. Once prepared, divide the pudding into 4-6 airtight containers, preferably glass jars, using a ½ cup scoop. Store these portions in the refrigerator for up to 5 days, ensuring you have a healthy and delicious option ready whenever hunger strikes.
For longer-term storage, this pudding can also be frozen. Simply place the individual portions in freezer-safe, airtight containers. It will keep well in the freezer for up to 3 to 4 weeks. When you’re ready to enjoy, transfer a frozen cup to the refrigerator to thaw overnight, or let it sit at room temperature for a couple of hours until it reaches your desired consistency. You may need to give it a quick stir after thawing.

Ingredients
- ½ cup chia seeds
- ½ cup vanilla protein powder (we used Vital Protein Vanilla Coconut Collagen Protein)
- 3 cups unsweetened coconut milk (canned or cartoned)
- 2 tablespoons agave syrup
- 2 teaspoons vanilla extract
- ¼ teaspoon salt
- ¼ cup shredded, unsweetened coconut
- ½ cup coconut chips
Coconut Whip
- 15 oz. coconut cream (refrigerated to separate cream from liquid)
- 2 teaspoons agave syrup
Instructions
-
In a large bowl, combine the chia seeds, protein powder, coconut milk, agave syrup, and vanilla extract. Whisk these ingredients together thoroughly until there are no lumps of protein powder remaining and the mixture is well combined.

-
Stir in the salt and shredded unsweetened coconut. Mix again to ensure the coconut is evenly distributed throughout the pudding mixture.

-
Cover the bowl and transfer it to the refrigerator. Allow the pudding to chill for at least 2 hours, or preferably overnight, to allow the chia seeds to fully expand and thicken the mixture to a creamy consistency.
-
While the pudding chills, prepare the toasted coconut chips. Spread the shredded coconut evenly onto a baking sheet. Place it under the broiler and toast for 30 seconds to 1 minute, or until the coconut turns golden brown and becomes crunchy. Watch carefully to prevent burning. Remove immediately from the oven and set aside to cool.

-
Next, prepare the coconut whip. Ensure your coconut cream has been thoroughly refrigerated, allowing the thick cream to separate and harden at the top. Scoop out only the hardened cream into a mixing bowl, leaving any clear liquid behind. Add the agave syrup to the cream. Using an electric hand mixer, whip the coconut cream and agave syrup until stiff peaks form, creating a light and airy topping.
-
Once the chia seed pudding has thickened and become creamy (after 2 hours or longer), use a ½ cup measure to portion it into 4-6 individual serving containers or jars. Top each cup generously with the prepared coconut whip and sprinkle with the toasted coconut chips. Serve immediately and enjoy!

Tips & Notes
- The specific brand and flavor of protein powder you use may subtly alter the taste of your chia pudding. Feel free to experiment with your favorites!
- For best results in terms of creaminess, full-fat coconut milk (canned or cartoned) is recommended.
- If you prefer, maple syrup or honey can be used as alternatives to agave syrup. Note that each will impart a slightly different flavor profile to the pudding.
