Featured Ingredients for Layers of Flavor
Crafting these exquisite coconut cream pie bars involves three distinct, yet harmonious, layers: a robust crust, a silky custard filling, and a dreamy whipped topping. Each layer plays a crucial role in building the overall flavor and texture profile of this tropical dessert. Here’s a closer look at the key ingredients you’ll need for each component, along with why they are chosen:
The Foundation: Buttery Crust
- Store-bought pie crust: For ultimate convenience and a consistently flaky, buttery base. This saves valuable time without compromising on flavor, providing a sturdy foundation for the creamy layers above.
The Heart: Creamy Custard Filling
- Unsweetened, full-fat coconut milk: Provides the essential coconut flavor and a liquid base for the custard. Full-fat varieties ensure maximum richness and a smooth texture.
- Unsweetened coconut cream: This concentrated form of coconut milk adds an extra layer of richness and body, contributing to the luxurious, thick consistency of the filling.
- Agave syrup: A natural sweetener that offers a clean, mild sweetness, allowing the natural coconut flavors to shine without overpowering them. It also blends beautifully into the creamy texture.
- Vanilla extract: Enhances all the other flavors, adding a warm, aromatic depth that complements the tropical notes of coconut.
- Cornstarch: The essential thickening agent that transforms the liquid coconut base into a firm, sliceable custard, giving the bars their signature texture.
- Kosher salt: A pinch of salt is vital for balancing the sweetness and enhancing the overall flavor profile, making the coconut taste even more vibrant.
The Crown: Airy Whipped Topping
- Unsweetened coconut flakes: Toasted to a golden brown, these provide a delightful crunch and intensify the coconut flavor, adding a beautiful visual appeal.
- Heavy whipping cream: The base for our traditional whipped topping, creating a light, fluffy, and decadent cloud of cream that perfectly complements the rich filling.
- Agave syrup: Sweetens the whipped cream subtly, ensuring it’s not overly sugary but just sweet enough to enhance the overall dessert.
- Vanilla extract: Adds another layer of warmth and fragrance to the whipped topping, harmonizing with the filling.

How to Craft Your Own Coconut Cream Pie Bars
Creating these delightful coconut cream pie bars is a straightforward process, broken down into manageable steps for an enjoyable baking experience. Follow these detailed instructions to achieve perfect results every time.
Step 1: Preparing the Flaky Crust
- Preheat your oven to 350°F (175°C). This ensures the crust bakes evenly and becomes beautifully golden.
- Carefully unroll your store-bought pie crust. Gently roll it out slightly further, aiming for a 9×9-inch square, approximately ¼-inch thick. Don’t worry if it’s not perfectly square; slight imperfections add character.
- Carefully transfer the rolled crust into a 9×9-inch baking pan. Press it firmly into the bottom and up the sides of the pan with your hands. This creates a secure base for the filling and prevents it from pooling.
- Using a fork, generously poke holes all over the surface of the pie crust. This crucial step, known as “docking,” allows steam to escape during baking, preventing the crust from puffing up and ensuring a flat, even base.
- Bake the crust for 20-25 minutes, or until it achieves a lovely golden-brown hue. Keep an eye on it to prevent over-baking. Once baked, remove it from the oven and allow it to cool completely in the pan on a wire rack. A fully cooled crust is essential before adding the filling.
Step 2: Crafting the Silky Coconut Filling
- In a small saucepan, combine the full-fat coconut milk, coconut cream, agave syrup, and vanilla extract. Whisk these ingredients together until well combined.
- Place the saucepan over medium heat and bring the mixture to a gentle simmer, stirring occasionally. Once simmering, reduce the heat to low to maintain a steady warmth.
- In a separate small bowl, remove ½ cup of the simmering coconut milk mixture. Whisk this ½ cup vigorously with the cornstarch until a smooth, lump-free slurry forms. This pre-mix prevents cornstarch from clumping when added to the hot liquid.
- Pour the cornstarch slurry back into the saucepan with the remaining coconut mixture. Whisk continuously for 1-2 minutes over low heat. You’ll notice the mixture thickening rapidly to a luxurious, pudding-like consistency. Remove from heat immediately once thickened.
- Allow the coconut filling to cool slightly, stirring occasionally to prevent a skin from forming. Then, pour the warm filling evenly over the cooled pie crust in the baking pan.
- Cover the pan tightly with plastic wrap, ensuring the plastic wrap touches the surface of the filling to prevent a skin from forming. Refrigerate for a minimum of 3-4 hours, or ideally overnight, until the filling is fully set and firm. This chilling time is vital for clean slices.
Step 3: Toasting the Aromatic Coconut Flakes
- Spread the unsweetened coconut flakes evenly in a single layer on a baking sheet.
- Place the baking sheet under the broiler for 1-2 minutes. This step requires your undivided attention! Coconut flakes can go from perfectly golden to burnt in a matter of seconds. Watch them constantly, and as soon as they turn a beautiful golden brown, remove them from the oven. Set aside to cool.
Step 4: Preparing the Fluffy Whipping Cream
- For the best results, place the metal bowl of your stand mixer and the whisking attachment in the refrigerator for at least 15-20 minutes to chill thoroughly. A cold bowl and whisk are key to achieving light and airy whipped cream.
- Once chilled, remove the bowl and attachment from the refrigerator and attach them to your stand mixer. Pour the heavy whipping cream into the cold bowl.
- Begin whisking on medium-low speed. Continue to whisk for about 3-4 minutes, or until the cream starts to thicken and soft peaks begin to form.
- Gradually add the agave syrup and vanilla extract to the thickening cream.
- Increase the speed slightly to medium and continue whipping for another 5-7 minutes, or until firm peaks form. Be careful not to over-whip, as it can turn granular.
Step 5: Assemble & Indulge!
- Once the coconut custard is perfectly set, spread the freshly made whipped topping evenly over its surface.
- Generously sprinkle the toasted coconut flakes over the whipped cream.
- Slice into individual bars and serve immediately. If not serving right away, keep the bars refrigerated to maintain their freshness and texture. Enjoy your delightful homemade creation!

Expert Tips for Perfect Coconut Cream Pie Bars
Achieving bakery-quality coconut cream pie bars is simple with a few insider tips. Pay attention to these details to ensure your dessert is an absolute triumph:
- Coconut Product Consistency: The quality and thickness of coconut milk and cream can vary between brands. We’ve found that brands like Thai Kitchen or 365 consistently yield excellent results for both the coconut milk and coconut cream, producing a perfectly creamy and set custard. If your mixture seems too thin, a tiny bit more cornstarch slurry can be added, but be cautious not to overdo it.
- Sweetener Alternatives: While agave syrup offers a neutral sweetness that lets the coconut flavor shine, you can certainly experiment with other natural sweeteners. Maple syrup or honey are great alternatives, but be mindful that they possess more distinct flavors that will subtly alter the overall taste profile of your bars. Start with a slightly lesser amount and adjust to taste.
- The Critical Chilling Period: Do not rush the setting time for the coconut custard. This is perhaps the most crucial step for achieving beautifully firm, sliceable bars. The longer the custard chills, the better it will set. An overnight refrigeration is ideal, ensuring a perfectly stable and non-runny bar. Patience truly pays off here!
- Mastering Toasted Coconut: Toasted coconut flakes add an incredible depth of flavor and texture. When broiling, stay vigilant! Coconut can go from golden to burnt in mere seconds. Keep your oven door slightly ajar and watch them continuously, stirring once, until they reach a beautiful golden brown. Alternatively, you can toast them gently in a dry skillet over medium-low heat, stirring frequently.
- Achieving Fluffy Whipped Cream: For the lightest, airiest whipped cream, ensure your mixing bowl and whisk attachment are thoroughly chilled. Using very cold heavy cream also helps. Start whipping on medium-low speed and gradually increase. Stop as soon as firm peaks form to avoid over-whipping, which can result in a grainy texture.
- Clean Slicing Technique: For neat and tidy bars, use a sharp, warm knife. Run your knife under hot water, wipe it clean, and then make your cut. Repeat this process for each slice to prevent dragging the filling and topping.

Crafting a Dairy-Free Coconut Cream Topping
For those seeking a dairy-free option without sacrificing any of the decadent creaminess, our dairy-free coconut whipped cream is the perfect solution. It’s light, fluffy, and boasts an intense coconut flavor that beautifully complements the pie bars. Here’s how to create this wonderful alternative:
Dairy-Free Topping Ingredients
- 30 oz. cold coconut cream: This typically equates to about two standard cans of full-fat coconut cream. Ensure the cans have been refrigerated for at least 24 hours to allow the solid cream to separate from the liquid.
- 2-3 tablespoons agave syrup: Or adjust to your preferred level of sweetness.
Dairy-Free Topping Directions
- Carefully open the chilled cans of coconut cream. Scoop out only the hardened, thick coconut cream from the top of the can. Discard any remaining coconut water, or save it for another recipe like smoothies. The solid cream is what will whip into a fluffy topping.
- Transfer the hardened coconut cream into a very cold stainless steel mixing bowl. For best results, chill your bowl and whisk attachment in the freezer for 15-20 minutes before beginning.
- Whip the coconut cream on medium-high speed using a stand mixer or a hand mixer. Continue to whip until the cream becomes light, airy, and fluffy, mimicking the texture of traditional whipped cream.
- Slowly drizzle in the agave syrup while continuing to whip. It’s important to add the agave gradually; adding too much too quickly can cause the coconut whip to seize and lose its fluffy texture.
- Once the coconut cream is perfectly light and fluffy, it’s ready to use. Spread this dairy-free whipped cream generously over the chilled coconut custard layer.
- Finish by sprinkling the toasted coconut flakes over the top for added texture and a burst of flavor.

Storage & Make-Ahead Tips
Proper storage is key to maintaining the freshness and deliciousness of your coconut cream pie bars. Here’s how to best preserve your delectable creation:
- Refrigeration: These bars are best enjoyed chilled. Store any leftovers in an airtight container in the refrigerator for up to 3 days. This will keep the crust crisp, the filling firm, and the topping fresh.
- Freezing Not Recommended: We do not recommend freezing these coconut cream pie bars. The creamy coconut filling and the delicate whipped topping are likely to develop an undesirable, grainy, or watery texture upon thawing. The magic of these bars lies in their smooth, luxurious layers, which are best experienced fresh from the fridge.
- Make-Ahead Advantage: The beauty of these bars is that they are an excellent make-ahead dessert. You can prepare the crust and the coconut custard filling a day in advance. Simply cover the set custard with plastic wrap and keep it refrigerated. Prepare the whipped topping and toast the coconut flakes just before serving for the freshest taste and best texture. This strategy makes entertaining a breeze!

- ½ cup agave syrup
- 1 teaspoon vanilla extract
- ⅓ cup cornstarch
- ½ teaspoon kosher salt
Topping
- 1 cup unsweetened coconut flakes
- 1 cup heavy whipping cream
- 2 tablespoons agave syrup
- 1 teaspoon vanilla extract
Alternative Topping
- coconut whipped cream, see directions in notes
Instructions
-
Preheat the oven to 350ºF.
-
Prepare the crust. Roll the pie crust out into a 9×9-inch square (about ¼-inch thick) so that it will cover the bottom of a 9×9-inch pan. It’s okay if it’s not perfectly square. Gently place the pie crust in the pan. Press the crust into the bottom of the pan with your hands and up the sides. The crust will shrink when it bakes.
-
Use a fork to poke holes into the pie crust. Bake for 20-25 minutes or until golden brown. Remove from the oven and let the crust cool completely. Set aside.
-
Make the coconut filling. Heat the coconut milk, coconut cream, agave syrup, and vanilla extract in a small saucepan over medium heat. Whisk the ingredients together. Bring the mixture to a gentle simmer and then turn the heat to low.
-
Remove ½ cup of the coconut milk and whisk it together with the cornstarch until smooth. Pour the cornstarch slurry back into the saucepan and whisk until thickened and creamy. Remove from the heat. The coconut mixture should thicken very quickly to a pudding consistency. Let the mixture cool.
-
Pour the coconut filling on top of the cooled pie crust and cover it with plastic wrap. Refrigerate for 3-4 hours or overnight until set.
-
Toast the coconut flakes. Add the coconut flakes to a baking sheet and broil the coconut for 1-2 minutes or until golden brown. Don’t walk away from the coconut flakes, it browns quickly. Remove from the oven and set aside.
-
Make the whipping cream. Place the metal bowl of a stand mixer and whisking attachment in the refrigerator (for best results). When the bowl is cold, remove it from the refrigerator and place it under the standing mixer.
-
Add heavy whipping cream to the bowl and whisk on medium/low speed until the cream begins to thicken (3-4 minutes). Add the agave syrup and vanilla extract.
-
Continue whipping on medium/low speed until peaks begin to form (5-7 minutes).
-
Spread the whipped topping on top of the coconut custard and top with the toasted coconut. Serve immediately or refrigerate.
Tips & Notes
- The amounts of coconut milk may vary slightly depending on what brand you are using. We generally use Thai Kitchen or 365 for coconut milk and coconut cream.
- Feel free to use homemade pie crust.
- You can use maple syrup or honey instead of agave. Just be aware that honey and maple syrup has a more robust flavor and will change the taste of the bar.
- Be sure to allow enough time for the custard to set; the longer the better.
Dairy-free coconut whipped cream option

Directions:
- Open the coconut cream and use only the hardened coconut cream, discard the coconut water.
- Transfer the hardened coconut cream to a cold stainless steel bowl and whip on medium/high speed until the cream turns light and fluffy. Slowly drizzle the agave syrup onto the whip. If you add too much agave too quickly the coconut whip may seize.
