There’s nothing quite like the arrival of cherry season, and here in the midwest, we embrace it with open arms! That burst of sweet-tart flavor signals warmer days and endless culinary possibilities. This year, my excitement for fresh cherries has culminated in a new obsession: these incredibly delightful Cherry Almond Croissant Baked Oats. They represent the pinnacle of my long-standing love affair with baked oatmeal, a passion that dates back to the early 2000s. Drawing inspiration from the delicate, nutty layers of classic almond croissants – a pastry so utterly divine! – the addition of sweet, juicy cherries felt like a natural, harmonious pairing. I am absolutely thrilled to share this recipe with you, and I truly hope it becomes a cherished favorite in your home, just as it has in ours (even my toddler, Gus, can’t get enough!).

Embracing the Sweetness of Cherries in Every Bite

It’s honestly a mystery to me why it took so long to feature cherries more prominently in our recipes at Fit Foodie Finds! I adore munching on fresh, ripe cherries during those long, hot summer days – their natural sweetness and hydrating properties make them the perfect summer snack. Yet, for years, incorporating them into my cooking felt like an afterthought. While we do have a few beloved cherry recipes on the site, such as our Pistachio Cherry Granola, the irresistibly Yummy Cherry Crisp, and the original Fit Foodie Finds favorite, these Cherry Pie Energy Balls, this particular recipe marks our very first cherry oatmeal creation. And let me tell you, it was worth the wait! The combination of robust whole grain oats, fragrant almond notes, and vibrant cherries creates a breakfast experience that is both satisfying and utterly delicious.

Key Ingredients for Perfect Cherry Almond Baked Oats

The magic of this baked oatmeal lies in a carefully selected blend of ingredients that come together to create that coveted almond croissant profile. Each component plays a vital role in achieving the perfect balance of flavor and texture:

  • Fresh Cherries: Unquestionably the star of this recipe! Their natural sweetness and slight tartness cut through the richness of the almond, adding a vibrant burst of fruit. You’ll need to meticulously pit your cherries and slice them in half before gently folding them into the oatmeal mixture. For an extra touch of visual appeal and flavor, I always recommend slicing a few extra to sprinkle on top just before serving.
  • Sliced Almonds: Absolutely essential for replicating that signature almond croissant flavor and providing a delightful textural contrast. A generous sprinkling of slivered almonds atop the oatmeal bake before it goes into the oven ensures they become wonderfully toasted and fragrant, adding a satisfying crunch to every bite.
  • Almond Extract: This is where the “almond croissant” truly comes alive! I honestly cannot get enough of this intense, aromatic flavor. It truly elevates the almond profile, making it deeply rich and wonderfully fragrant. For this reason, I strongly advise against substituting it with vanilla extract unless you absolutely have no other option. The almond extract is paramount to the authentic taste.
  • Rolled Oats: The foundation of our baked oatmeal. Using rolled oats (also known as old-fashioned oats) is key to achieving a delightfully chewy yet surprisingly light texture that isn’t overly dense. While quick oats can be used in a pinch, be aware that they will alter the texture, resulting in a slightly softer bake. However, steel-cut oats are not a suitable substitution for this recipe, as they require a much longer cooking time and different liquid ratios.
  • Maple Syrup: Our natural sweetener of choice, maple syrup adds a rich, subtle sweetness that complements the cherries and almonds beautifully, without being overpowering.
  • Unsweetened Plain Almond Milk: This liquid base keeps the oats moist and helps create a creamy texture. Using unsweetened varieties allows you to control the overall sweetness of the dish.
  • Eggs: Act as a binder, helping to hold the baked oatmeal together and giving it a slightly custardy consistency.
  • Oat Flour (or alternative flour): A small amount of flour helps with the structure and ensures a cohesive bake. You can easily use all-purpose flour or a gluten-free blend if preferred.
  • Baking Powder & Sea Salt: These pantry staples work together to give the oatmeal a slight lift and enhance all the other flavors.

To truly achieve that full, authentic almond croissant effect, please, do not underestimate or skip the powdered sugar! It’s more than just a garnish; it truly is the cherry on top (pun absolutely intended! 😋). The delicate dusting of powdered sugar adds a touch of elegant sweetness and visually completes that classic, irresistible almond croissant flavor profile we all know and adore. It transforms a simple baked oatmeal into a gourmet experience.

Craving this as a healthy snack? Absolutely! I love slicing my baked oats into smaller, convenient squares. These bite-sized portions are perfect for a wholesome, energizing snack throughout the day. They’re also a fantastic, approved snack option for toddlers, making them a family-friendly treat!

Ready to enjoy this as your hearty breakfast? Yes, mama! Simply slice into more substantial squares for a satisfying morning meal. Serve it warm or cold, topped with additional fresh cherries, a dollop of creamy Greek yogurt for extra protein, or simply alongside your favorite cup of freshly brewed coffee for a truly comforting start to your day.

It travels exceptionally well, making it ideal for packed lunches or picnics, is equally delicious served hot straight from the oven or chilled, and is just so undeniably good.

Elevate Your Experience with More Topping Ideas

Even though this baked oatmeal is phenomenal on its own, I find that when I’m enjoying it multiple times throughout the week (which happens often!), switching up the toppings adds a wonderful layer of variety. It keeps breakfast exciting and, let’s be honest, my toddler also appreciates the novelty! 😋 Here are some of my favorite go-to additions to take your baked oats to the next level:

  • Extra Fresh Cherries: A no-brainer! A few extra pitted, sliced cherries on top enhance the fresh fruit flavor and add vibrant color. Any other sliced fruit like berries or peaches would also be delicious.
  • Creamy Greek Yogurt or Cream Cheese: A generous dollop of plain Greek yogurt adds a tangy contrast and a boost of protein, making your breakfast even more substantial. For an extra decadent touch, try a small scoop of softened cream cheese for a rich, cheesecake-like experience.
  • A Drizzle of Maple Syrup or Honey: If you prefer a little extra sweetness, a light drizzle of pure maple syrup or golden honey is a perfect complement.
  • Your Favorite Nut Butter: A swirl of almond butter or cashew butter adds healthy fats, protein, and a creamy texture that pairs wonderfully with the almond notes in the oats.
  • Toasted Coconut Flakes: For a tropical twist and an added layer of crunch.
  • Chocolate Chips: A scattering of mini chocolate chips (dark or milk) melts beautifully into the warm oats, creating a truly indulgent treat.

Storing Leftover Baked Oats for Freshness

One of the many benefits of this baked oatmeal recipe is how well it stores, making it an ideal candidate for healthy meal prep. Proper storage ensures you can enjoy its deliciousness throughout the week:

Once your baked oatmeal has completely cooled to room temperature, which is crucial for preventing condensation and maintaining texture, I recommend slicing it into individual serving-sized squares. Carefully transfer these portions into a glass or high-quality plastic airtight container. This keeps them fresh and prevents them from drying out or absorbing other refrigerator odors.

Store your prepared baked oats in the refrigerator for up to 5 days. While it might be tempting to leave them out overnight on the counter if you plan to eat them the next morning, they will maintain their freshness and quality much longer when properly refrigerated. For longer storage, baked oats can also be frozen! Wrap individual slices tightly in plastic wrap, then place them in a freezer-safe bag or container for up to 2-3 months. Thaw overnight in the fridge or reheat directly from frozen (though reheating time will increase).

When you’re ready to serve your stored baked oats again, whether from the fridge or freezer, a fresh sprinkle of powdered sugar will bring back that “almond croissant” charm and visual appeal. You can enjoy them cold, at room temperature, or gently reheated in the microwave for 30-60 seconds, or in a toaster oven for a crispier edge.

Ingredients

Wet

  • 2 large eggs
  • 1 teaspoon almond extract
  • ¼ cup maple syrup
  • 1.25 cups unsweetened plain almond milk

Dry

  • 2 cups rolled oats
  • ½ cup oat flour, or any kind of flour
  • 1 teaspoon baking powder
  • ¼ teaspoon sea salt
  • 1 cup fresh cherries
  • 1 cup sliced almonds
  • Powdered sugar for garnish

Instructions

  • Prepare Oven and Dish: Preheat your oven to 350℉ (175°C). Lightly spray a 9-inch by 9-inch baking dish with nonstick cooking spray to prevent sticking.
  • Prep Cherries: Wash and prepare the fresh cherries by carefully removing their pits. Once pitted, cut each cherry into quarters. Set the prepared cherries aside.
  • Combine Wet Ingredients: In a large mixing bowl, add the eggs, almond extract, maple syrup, and unsweetened plain almond milk. Whisk thoroughly until all wet ingredients are well combined and smooth.
  • Mix Dry into Wet: Add the rolled oats, oat flour (or your chosen flour), baking powder, and sea salt to the bowl with the wet ingredients. Stir gently until all the dry ingredients are just incorporated. Then, carefully fold in the prepared quartered cherries, stirring one more time to distribute them evenly.
  • Transfer and Top: Pour the oatmeal batter into your prepared baking dish, spreading it out evenly. Generously sprinkle the sliced almonds over the entire surface of the batter.
  • Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the baked oatmeal is set, golden brown, and firmed up in the center. A toothpick inserted into the center should come out mostly clean.
  • Cool and Serve: Remove the baked oatmeal from the oven and allow it to cool slightly. Just before serving, dust generously with powdered sugar to achieve the full “almond croissant” effect. Slice into squares and enjoy warm or at room temperature!

Tips & Notes

  • For minimal cleanup, you can prepare and mix all the ingredients directly in the baking dish itself!
  • Ensure cherries are pitted thoroughly to avoid any surprises. A cherry pitter can make this task much easier and quicker.
  • Adjust maple syrup quantity to your desired level of sweetness.
