The Best Cuts of Beef for Grilling Steak
Choosing the right cut of beef is the first crucial step to a magnificent grilled steak. While many cuts can be grilled, some are inherently better suited to the intense, direct heat of a grill, offering superior flavor, tenderness, and juiciness. Our top pick for grilling is often the New York Strip Steak, celebrated for its excellent marbling (intramuscular fat) and robust beefy flavor. Its consistent thickness also makes it ideal for even cooking and achieving that perfect sear.
However, the world of beef offers a delightful variety, and exploring other cuts can open up new flavor profiles and textures. Here are some of the best cuts that shine brightly on the grill, each with its own unique characteristics:
- New York Strip: A balance of tenderness and chew, with a good fat cap for flavor. Easy to cook evenly.
- Ribeye Steak: Known for its exceptional marbling and rich, buttery flavor. Highly tender and incredibly juicy.
- Sirloin Steak: A lean and flavorful cut, more economical than ribeye or strip. Benefits from a good marinade to enhance tenderness.
- **Flank Steak:** A lean, broad, flat cut with a strong beefy flavor. Best marinated and grilled quickly to medium-rare, then sliced against the grain for tenderness. (Check out our Grilled Flank Steak recipe)
- **Skirt Steak:** Similar to flank, but often thinner and more intensely flavored. Also ideal for marinades and quick grilling, sliced against the grain. (Skirt Steak recipe)
- **T-Bone Steak:** A bone-in cut featuring both a New York strip and a tenderloin section. Offers two distinct textures and flavors in one steak.
- **Porterhouse Steak:** A larger version of the T-Bone, with a more substantial tenderloin portion. Excellent for sharing.
- **Tri-Tip Steak:** A triangular cut from the bottom sirloin. Lean yet flavorful, often grilled whole and then sliced.
- **Filet Mignon (Tenderloin):** The most tender cut, very lean with a mild flavor. Known for its melt-in-your-mouth texture.

Essential Kitchen Tools for Grilling Steak
Having the right tools makes all the difference in achieving grilling success. While you don’t need a professional setup, a few key items will elevate your steak-grilling game and ensure safety and precision:
- Reliable Grill: Whether it’s charcoal, gas, or even an indoor electric grill, ensure it’s clean and in good working order. A gas grill offers precise temperature control, while charcoal provides distinct smoky flavor.
- Grill Brush: Absolutely crucial for cleaning grates before and after cooking to prevent sticking and ensure even heat distribution.
- Long-Handled Tongs: Essential for safely flipping steaks without piercing them, which would release precious juices.
- Instant-Read Meat Thermometer: Your best friend for perfectly cooked steak. This tool eliminates guesswork, allowing you to hit your desired doneness with accuracy.
- Baking Dish or Gallon-Size Ziploc Bags: For marinating steaks, ensuring they are fully submerged and flavored.
- Cutting Board: A sturdy board for preparing your steaks and, importantly, for resting and slicing them after grilling. Opt for one with a juice groove.
- Aluminum Foil: Useful for tenting steaks during the resting period to retain heat and juices.
- Small Bowl & Whisk: For preparing your marinades or seasoning mixes.
- Olive Oil or High-Smoke Point Oil: For lightly oiling your grill grates to prevent sticking.
Mastering the Art of Flavoring Grilled Steak
The beauty of steak lies in its inherent robust flavor, but a little enhancement can take it from great to extraordinary. There are countless ways to infuse your steak with additional taste, and sometimes, the simplest approaches yield the most profound results. A classic combination of quality salt, freshly ground black pepper, and a pat of butter is often all you need to highlight the beef’s natural goodness. However, for those seeking more depth and complexity, both dry seasonings and liquid marinades offer fantastic avenues for flavor exploration. We’re passionate about both methods, and each has its unique advantages.
Elevating Flavor with Dry Seasonings and Rubs
Dry rubs and simple seasonings are a fantastic way to create a flavorful crust and add a burst of taste to your steak. They’re quick, easy, and allow the beef’s natural flavors to shine through beautifully. You can certainly keep it minimalistic with just salt and pepper, which is a testament to a quality steak. For those who enjoy a bit more flair, pre-made steak seasonings or homemade blends offer a world of options. Applying a dry rub 30 minutes to an hour before grilling allows the salt to penetrate the meat and tenderize it, while other spices create a flavorful coating.
- **Montreal Steak Seasoning:** A popular blend featuring coarse salt, black pepper, garlic, onion, and various spices, creating a bold, savory crust.
- **Homemade Steak Seasoning:** Customizing your own blend allows you to control the ingredients and tailor the flavor profile to your exact preferences, often including paprika, chili powder, and herbs.
- **Weber Chicago Steak Seasoning:** Offers a distinct savory and slightly spicy profile, perfect for adding a touch of the Windy City to your grill.
- **Penzey’s Mitchel Street Steak Seasoning:** A gourmet option known for its high-quality ingredients and balanced flavor that complements steak wonderfully.
Infusing Tenderness and Flavor with Marinades
We are firm believers in the magic of marinating steaks before grilling. Marinades achieve a dual purpose: they tenderize the meat through acidic ingredients or enzymes, and they infuse it with deep, complex flavors. The result is an incredibly juicy, tender steak that’s bursting with taste. While store-bought marinades offer convenience, crafting your own from scratch allows for customization and fresh, vibrant flavors. A good marinade typically includes an acid (like vinegar or citrus juice), an oil, and a blend of seasonings. Discover our go-to grilled steak marinade below, designed to deliver maximum flavor and tenderness.
Our Signature Steak Marinade for Grilling Excellence
For this exceptional grilled steak recipe, we’re utilizing our absolute favorite homemade steak marinade. It’s a harmonious blend of pantry staples that combine to create an unforgettable flavor profile, ensuring your steak is always moist and delicious. Here’s a closer look at the key ingredients and their roles:
- Fresh Minced Garlic: An indispensable flavor enhancer, garlic adds a pungent, aromatic depth that complements beef beautifully. It’s truly amazing in almost any marinade.
- Worcestershire Sauce: This classic condiment brings a delightful tanginess, a hint of umami, and a punch of vinegar. It’s absolutely essential for adding complexity and richness to the marinade.
- Balsamic Vinegar: Beyond its acidic tenderizing properties, balsamic vinegar contributes a subtle sweetness and a rich, fruity undertone, balancing the savory elements without being overly sweet.
- Fresh Lemon Juice: A touch of citrus goes a long way. Lemon juice brightens the entire marinade, adding a fresh zest that cuts through the richness of the beef and activates other flavors.
- Olive Oil: More than just a liquid base, olive oil helps to distribute the flavors evenly, carries fat-soluble aromas, and plays a crucial role in keeping the steaks moist and juicy during grilling.
- Lemon Pepper: This seasoning offers the traditional peppery kick you expect, but with the added brightness and zesty punch of lemon. It’s a fantastic combination that elevates the overall taste profile.

Step-by-Step Guide: How to Grill a Steak to Perfection
Grilling a steak can seem daunting, but with these clear, easy-to-follow steps, you’ll achieve mouth-watering results every time. The key is in preparation, temperature control, and a little patience. Let’s get grilling!
- **Prepare Your Marinade:** In a medium-sized bowl, combine the Worcestershire sauce, balsamic vinegar, minced garlic, olive oil, fresh lemon juice, and lemon pepper. Whisk these ingredients together thoroughly until well combined. This forms the flavorful base for your steaks.
- **Marinate the Steaks:** Place your New York strip steaks (or chosen cut) into a large gallon-size freezer bag or a non-reactive baking dish. Pour the prepared marinade over the steaks, ensuring each piece is fully coated. Remove as much air as possible from the bag before sealing, or cover the baking dish tightly. Allow the steaks to marinate at room temperature for at least 30 minutes. For deeper flavor, you can refrigerate them for up to 2 hours, but remember to bring them back to room temperature (about 20-30 minutes on the counter) before grilling for more even cooking.
- **Preheat and Prepare the Grill:** While the steaks are marinating (or coming to room temperature), preheat your grill to a high temperature, aiming for approximately 500ºF (260ºC). Once hot, take a paper towel dipped in a little olive oil (held with tongs) and carefully rub down your grill grates. This prevents sticking and helps create those desirable sear marks.
- **Execute the Perfect Grill:** Carefully transfer the marinated steaks to the preheated grill.
- **Sear Phase:** Sear the steaks over direct, high heat (500ºF / 260ºC) for 2 minutes on each side. This intense initial heat creates a beautiful, caramelized crust and those signature grill marks.
- **Cook Phase:** After searing, reduce the grill temperature to medium-high, around 400ºF (200ºC). Close the lid and continue grilling for an additional 10-15 minutes. Remember to flip the steaks halfway through this cooking phase to ensure even doneness. Use an instant-read meat thermometer to check the internal temperature, aiming for your desired doneness (refer to our temperature guide below). For a medium-rare steak, cook until the internal temperature reaches 135-140ºF (57-60ºC).
- **The All-Important Rest:** Once your steaks reach their target internal temperature, remove them from the grill and place them on a clean plate or cutting board with a lip to catch any juices. Tent them loosely with aluminum foil and let them rest for at least 5-10 minutes. This critical step allows the juices to redistribute throughout the meat, ensuring a supremely juicy and tender steak. Skipping the rest can result in dry, less flavorful meat. The internal temperature will also continue to rise by another 5ºF (3ºC) during this time.
- **Slice and Serve:** After resting, slice your perfectly grilled steak against the grain to maximize tenderness. Serve immediately with a generous pat of butter melting on top, or with your favorite accompanying sauces. The rich, beefy flavor from proper seasoning and grilling will likely mean you won’t need any additional steak or BBQ sauce!
Note: If you’ve properly seasoned your steaks with a good pinch of salt and pepper or our renowned steak marinade, you’ll find that the beef’s natural, delicious flavor is so satisfying that you won’t need any extra steak or BBQ sauce for serving.
Achieving Perfect Doneness: Grilled Steak Internal Temperature Guide
The most accurate way to ensure your steak is cooked exactly how you like it is by using an instant-read meat thermometer to measure its internal temperature. Everyone has a preference, from rare to well-done. Here’s a reliable guide to help you hit your sweet spot. *Always remove steak from the grill a few degrees before your target temperature, as it will continue to cook during the resting period.*
- 135ºF (57ºC) – Rare (very red, cool center)
- 140ºF (60ºC) – Medium-Rare (red, warm center)
- 150ºF (66ºC) – Medium (pink, warm center)
- 165ºF (74ºC) – Well-Done (no pink, cooked through)
Remember this golden rule: always let your steak rest for at least 5-10 minutes after cooking. This allows the internal temperature to rise by approximately 5ºF (3ºC) due to residual heat, and crucially, it allows the juices to redistribute throughout the meat, ensuring maximum tenderness and flavor.

Frequently Asked Questions About Grilling Steak
For optimal results, we recommend a two-zone grilling approach. Start by searing your steak at a very high temperature, around 500ºF (260ºC), for a few minutes on each side to create a beautiful crust. Then, lower the heat to approximately 400ºF (200ºC) to finish cooking the steak to your desired internal temperature. This method ensures both a great sear and even cooking.
The grilling time for a steak varies depending on its thickness and your preferred level of doneness. Generally, for a 1-inch thick steak cooked to medium-rare to medium, you can expect to grill it for approximately 10-15 minutes at about 400ºF (200ºC) after the initial high-heat sear. Always use a meat thermometer for precise results.
The most reliable method to determine if your steak is perfectly cooked is by checking its internal temperature with an instant-read meat thermometer. Insert the thermometer into the thickest part of the steak, avoiding any bones. For safe consumption, and to achieve various levels of doneness (e.g., 140ºF for medium-rare), refer to our detailed internal temperature guide. Remember to account for a 5-10 minute resting period, during which the temperature will continue to rise slightly.
Top 5 Expert Tips for Grilling Perfect Steaks
Mastering the grill means understanding a few fundamental principles. These top tips will help you achieve a steak that’s not just cooked, but truly celebrated for its flavor and texture.
- **Employ the Sear + Cook Method:** To achieve both incredible grill marks and a perfectly cooked interior, utilize our two-stage grilling technique. Start by searing your steak over very high heat (500ºF) for 2 minutes per side to develop a beautiful crust and impressive grill marks. Then, move it to a slightly lower temperature (around 400ºF) to finish cooking it through without burning the exterior. This ensures a juicy inside and a professional-looking finish.
- **Don’t Overcook – Trust Your Thermometer:** The biggest mistake grillers make is overcooking steak, leading to dry, tough results. An instant-read meat thermometer is your secret weapon. Always keep one handy and consistently monitor the internal temperature of your steak. Remove it from the grill a few degrees *before* your target doneness, as it will continue to cook while resting.
- **Always, Always Let It Rest:** This step is non-negotiable for a truly juicy steak. Once off the grill, transfer your steak to a cutting board and tent it loosely with aluminum foil. Let it rest for 5-10 minutes. This allows the muscle fibers to relax and the delicious juices to redistribute throughout the meat, rather than escaping onto your plate when you slice it. This simple act dramatically improves both tenderness and flavor.
- **Start with Room Temperature Steaks:** Cold steaks hitting a hot grill cook unevenly – the outside might char before the inside reaches the desired doneness. Take your steaks out of the refrigerator 20-30 minutes before grilling to allow them to come closer to room temperature. This promotes more uniform cooking from edge to center.
- **Don’t Crowd the Grill:** Resist the urge to pack too many steaks onto the grill at once. Overcrowding lowers the grill’s temperature, steaming the meat instead of searing it. Give each steak ample space to ensure proper airflow and consistent high heat, which is essential for developing that desirable crust. Grill in batches if necessary.

Proper Storage for Your Grilled Steak
To ensure your leftover grilled steak remains fresh and delicious for future meals, proper storage is essential. Allow the cooked steak to cool completely to room temperature (this usually takes about 30-60 minutes, but no longer than 2 hours to prevent bacterial growth). Once cooled, transfer the steak into an airtight container. This will help prevent it from drying out and absorbing odors from other foods in your refrigerator. Properly stored grilled steak can be refrigerated for up to 3-5 days. For longer storage, you can freeze individual portions in freezer-safe bags or containers for up to 2-3 months.
