- 1/8 teaspoon salt
- 1/8 teaspoon ground pepper
- 2 teaspoons ground cumin
- 1/2 teaspoon paprika
- 1 teaspoon chili powder
- 1 teaspoon salt
- 1/2 teaspoon garlic powder
- 1/3 cup nutritional yeast
- 1/4 teaspoon cayenne pepper
- 1.5 cups water
- 2 tablespoons white vinegar
- 2 teaspoons hot sauce
Instructions
- First, place cashews* in a large bowl and completely submerge them with water. Soak cashews overnight or for 12 hours so that they soften. Once softened, drain the water and set aside.
- Preheat the oven to 425ºF (220°C).
- Next, add the chopped red pepper, carrot coins, smashed garlic, and chopped shallot onto a baking sheet. Drizzle with olive oil, then season generously with salt and pepper. Toss to ensure everything is evenly coated.
