  3. Remove the pot from the heat. Carefully scrape the spinach mixture into a high-powered blender and blend on high until completely smooth. Set aside the vibrant spinach puree.
  4. Wipe the Dutch oven clean. Return it to medium heat and melt 2 tablespoons of coconut oil. Add 2 teaspoons turmeric, 2 teaspoons ground cumin, and 1 teaspoon coriander seeds to the hot oil. Toss the spices together and toast them over medium heat until fragrant, about 1-2 minutes.
  5. Add the diced yellow onion and 1 teaspoon of salt (from lentil base ingredients) to the toasted spices and toss to combine. Sauté the onion for 2-3 minutes until slightly softened. Then, add 5 cloves minced garlic and 2 teaspoons grated ginger, cooking for an additional 2-3 minutes until fragrant.
  6. Transfer the diced sweet potatoes, sliced carrots, and green lentils to the Dutch oven with the aromatics. Toss everything together and cook for 3-4 minutes. Add the 15 oz crushed tomatoes, 15 oz full-fat coconut milk, 1.5 cups vegetable broth, and the reserved blended spinach puree to the vegetables. Bring the mixture to a boil.
  7. Once boiling, reduce the heat to low. Cover the pot and allow the lentil curry to simmer for 30-40 minutes, stirring periodically (every 5-10 minutes) to ensure the lentils do not stick to the bottom of the pot and cook evenly. The lentils should be tender but still have a slight bite.
  8. While the curry simmers, prepare the basmati rice. Bring 3.5 cups of water to a boil in a separate saucepan. Add 2 cups of basmati rice and ½ teaspoon of kosher salt, then cover the pot. Reduce heat to low and simmer for about 20 minutes, or until water is absorbed.
