Ingredients
- 2 tablespoons sesame oil, separated
- 3 teaspoons soy sauce, separated
- 1 teaspoon garlic chili sauce
- ½ tablespoon fresh lime juice
- 1 lb. raw jumbo shrimp, peeled, de-veined, and tail removed
- 1 teaspoon garlic powder
- 8 green onions, minced (white and green parts separated)
- 3 small carrots, minced (~1 cup)
- 4 cups cooked chilled white rice (jasmine or basmati recommended)
- 1 large red bell pepper, minced
- 1 cup frozen edamame
- 3 large eggs
Sauce
- ¼ cup soy sauce
- 1 teaspoon maple syrup
- 2 teaspoons rice vinegar
- 1 teaspoon fish sauce
- 2 teaspoons minced garlic
- ½ teaspoon chili garlic sauce
Instructions

Marinate the Shrimp: In a medium bowl, combine 1 tablespoon of sesame oil, 2 teaspoons of soy sauce, 1 teaspoon of chili garlic sauce, and the fresh lime juice. Whisk well. Add the peeled, deveined shrimp to the bowl and toss to coat evenly. Sprinkle with garlic powder and toss once more. Cover and refrigerate for 30 minutes.

Meanwhile, prepare the fried rice sauce: In a separate small bowl, whisk together the ¼ cup soy sauce, maple syrup, rice vinegar, fish sauce, 2 teaspoons minced garlic, and ½ teaspoon chili garlic sauce. Set aside.

Cook the Shrimp: Heat a large skillet or wok over medium-high heat. Add a small amount of oil if needed. Once hot, add the marinated shrimp in a single layer. Cook for 2-3 minutes per side, until pink and opaque. Remove shrimp from the pan and set aside.

Sauté Vegetables: Return the skillet to medium-high heat. Add the remaining 1 tablespoon of sesame oil. Add the white parts of the green onion and the minced carrots. Sauté for 2-3 minutes until slightly softened and fragrant.

Stir-fry for 4-6 minutes, constantly tossing and pressing to get a slight crisp on the rice. Pour in the prepared fried rice sauce and add the cooked shrimp back to the pan. Toss everything together for another 3-4 minutes.

Scramble Eggs: Push the rice and vegetables to the sides of the pan to create a well in the center. Crack the 3 large eggs directly into the well. Gently scramble the eggs, adding 1 teaspoon of soy sauce to them as they cook. Aim for larger, fluffy curds. Once cooked, gently fold the scrambled eggs into the fried rice mixture until combined.
