- 6 cups cubed butternut squash (½ large butternut squash)
- 1.5 tablespoons avocado oil
- 2 teaspoons garlic powder
- 1 teaspoon ground cumin
- Salt, to taste
- Pepper, to taste
For the Chickpeas
- 1 15-ounce can garbanzo beans, drained, rinsed, and dried
- 1/2 tablespoon avocado oil
- 1/2 tablespoon lemon juice
- 1 teaspoon honey
- 1 teaspoon chili powder
- 1 teaspoon garlic powder
- Salt, to taste
For the Brown Rice
- 1 cup sprouted brown rice, uncooked
- 2 cups water
For the Bowls
- 4 cups arugula
- 1 cup microgreens
- 2 large avocados, sliced
- 1/4 cup harissa sauce
Instructions
For the Butternut Squash
- First, preheat your oven to 400ºF (200°C). Spread the cubed butternut squash evenly on a baking sheet. Toss the squash with avocado oil, garlic powder, cumin, salt, and pepper until well coated. Place the baking sheet on the top rack of your oven and roast for 15 minutes.
- Remove the baking sheet, toss the squash to ensure even cooking, and return it to the top rack. At this point, you can also place the seasoned chickpeas (prepared as per the next step) on the bottom rack. Roast for an additional 15 minutes, or until the squash is tender and slightly caramelized.
For the Chickpeas
- While the squash is roasting, spread the drained, rinsed, and thoroughly dried garbanzo beans on a separate baking sheet. Toss them with avocado oil, lemon juice, honey, chili powder, garlic powder, and salt.
- Place the baking sheet with chickpeas on the bottom rack of the oven (below the squash) during the second 15-minute roasting period. Roast for a total of 15 minutes, or until they are golden brown and crunchy.
For Brown Rice
- Combine the uncooked sprouted brown rice and water in a medium-sized pot. Bring the mixture to a rolling boil over high heat.
