- 1/2 medium red onion, diced
- 1/2 cup fresh blueberries
- 12 oz. cherry tomatoes, halved

- 1/3 cup goat cheese crumbles
Instructions
- Step 1: Begin by preparing our homemade balsamic vinaigrette and set it aside. While our homemade version is highly recommended, feel free to use your favorite store-bought vinaigrette if preferred.
- Step 2: Next, in a small skillet, toast the pine nuts over medium heat. This usually takes about 4-5 minutes, or until they achieve a lovely golden-brown color. Be extremely attentive during this step, as pine nuts can quickly go from perfectly toasted to burnt. Remove them from the heat immediately and let them cool completely.
- Step 3: In a large mixing bowl, combine the arugula, diced red onion, fresh blueberries, halved cherry tomatoes, dried cranberries, goat cheese crumbles, and the cooled toasted pine nuts. Gently toss all the ingredients together until they are well combined.
